What I Ate Wednesday (aka abdominal complaints part III)


I feel like I'm becoming a big ole snooze! Please attribute it to the fact that I can't eat as much as I want. I'm afraid that, given this post is about food, I need to continue talking about my tummy woes. Two weeks ago on What I Ate Wednesday I told you how I had pain and bubbling in my stomach. In last week's post, I told you how I was chugging back probiotics, and that the doctor had told me my gallbladder might be an issue. Well, the fun continues. I am awaiting my appointment for ultrasound and x-ray. In the meantime, I had a terrible attack of pain on the weekend. Like, writhing around and begging my husband to find me some kind (any kind!) of meds that might help. That passed after a couple of hours but I have been super cautious about what I eat and how much I eat since then.

So, this day of eats starts with my "safe" breakfast of Daiya black cherry vegan greek yogurt alternative. Perfect to satisfy hunger without creating much stress on the digestive system.

What I Ate Wednesday


My gosh, Wednesday rolls around quick, huh? The weather has been so lovely (for the most part) lately that I am looking forward to the weekend and perhaps a wee bit of lounging with a book on the deck.

This What I Ate Wednesday, there seems to be some focus on veg sushi. I had a bit of vegetarian sushi from the grocery store one day, along with a big ole salad, above. I am continuing with my salad challenge (#wirlsaladchallenge on Instagram), adding as many fruits, veggies, nuts, legumes and seeds on top of my salad as possible. It takes a bit of extra effort but it has really made my salads more enjoyable.

What I Ate Wednesday, Extreme Cold Edition


How's everyone doing? I, like many others, am trying not to sink into a pit of misery, given this unrelenting, bone-chillingly cold weather. I'm surprised I haven't packed on 20 pounds this winter, because all I want to do is sit around and eat by the fireplace.

How well I eat depends on what groceries we have in the house. This little pasta meal, above, is one of my desperation lunches. Not much in the house at all calls for sautéing frozen veggies and chickpeas, adding a bit of fresh asparagus and some leftover cooked pasta and dressing it up with a little bit of Bragg's liquid aminos. Oh, and I usually throw in some minced garlic. That helps. It's surprisingly good actually.

What I Ate Wednesday


This week is the "Oh crap, it's the end of summer vacation and we haven't accomplished any of our home projects" week. That means painting, organizing and purging, with a wee bit of cooking tossed in. It also means I haven't taken as many food photos. So I'm going to share a single day's worth of food pics from yesterday.

I started the day with Bob's Red Mill 7 Grain Hot Cereal. It reminds me of the Red River Hot Cereal I enjoyed as a child. I served it topped with brown sugar just as I did as a child. But I use soy beverage now instead of dairy. The 7 grain cereal keeps me full for a while. It's a combo of wheat, rye, triticale, oats, oat bran, barley, brown rice and flaxseed, so it's full of fibre, protein, vitamins and minerals.

What I Ate Wednesday


We have had some crazy weather here these past couple of days. We got our new patio conversation set out on the deck just in time for rain! Oh well, better days ahead. Here's a Wednesday look at some of the foods we've been eating this week, starting with these "Omaha Yakisoba" noodles, made from a recipe in Isa Does It. I rarely make recipes with cabbage (too lazy to shred it) so this took me nicely out of my comfort zone. It features red cabbage, broccoli and corn.

What I Ate Wednesday


We are once again midway through the week and I'm taking a look back at some of the meals I have eaten lately. I'll keep my complaining brief - there's a cold weather warning here today and it feels like spring may never come. Malaise has set in. There, I'm done. Except to say, this kind of winter-should-be-over-by-now feeling calls for easy meals. But then I also say summer heat calls for easy meals! I guess I just like easy meals!

One day for lunch I went old school and just threw some fake turkey slices on a bun with lettuce, tomatoes and mayo. I added sliced strawberries on the side because...well, strawberries are awesome.

What I Ate Wednesday


Happy What I Ate Wednesday! I hope you have been enjoying delicious, healthy food this week. Although the weather has been highly inconsistent, with everything from sunshine (very little) to rain to wind to snow, we have been acting like it's warm when it comes to meals. Quick and simple is the goal.

We continue to love sandwiches made of chickpea tomato salad on warmed naan bread, above. So yummy. I satisfied my pesky sweet tooth with a delicious cherry vanilla creme natural soda from Blue Sky.

What I Ate Wednesday, new year edition


On Sunday, I shared my vegetarian menu plan for this week. (Well, it's vegan for me and vegetarian for the other three family members.) Today, on What I Ate Wednesday, I'm looking at a few meals I consumed in the past week, before my menu plan kicked in. Visit me Sunday to hear whether my plan was a success. I'll share any of the recipes that work out.

As I noted then, my goal for the new year is to increase my family's fruit and veggie consumption every day. One of the strategies I'm using is to buy more frozen vegetables for quick, easy meals.

What I Ate Wednesday, with a greenish smoothie


Happy What I Ate Wednesday! So far I haven't made any Christmas cookies. If I had, I would be forced to show you lots of photos of all the cookies I nibbled on while I was baking. That's still to come.

In the meantime, a look at some of the stuff I ate this week. 

I like my smoothies to be a little (or a lot) sweet. So, rather than going totally green, I added a bit of veg and a lot of fruit to my breakfast smoothie today. The result is this delicious yet healthy green-ish smoothie.
