What I Ate Wednesday


My gosh, Wednesday rolls around quick, huh? The weather has been so lovely (for the most part) lately that I am looking forward to the weekend and perhaps a wee bit of lounging with a book on the deck.

This What I Ate Wednesday, there seems to be some focus on veg sushi. I had a bit of vegetarian sushi from the grocery store one day, along with a big ole salad, above. I am continuing with my salad challenge (#wirlsaladchallenge on Instagram), adding as many fruits, veggies, nuts, legumes and seeds on top of my salad as possible. It takes a bit of extra effort but it has really made my salads more enjoyable.


Yesterday the kids and I were out at an appointment, the location of which happened to be near a sushi restaurant. So...why cook dinner on a beautiful warm day when you can grab a tray of veg sushi instead? Why indeed.


As for this week's look at a full day of eating, I'm sorry I'm getting repetitive. I have been having the same type of smoothie almost every single day for at least a couple of weeks. I put in bananas, berries, cherries, chia seeds, orange juice, non-dairy milk and a teaspoon of Natural Calm for magnesium. It's a winning combination so I'm sticking with it until I'm sick of it!


I cooked up some pasta for my lunch and topped it with pink sauce I made the night before from one of my fave recipes in Chloe's Vegan Italian Kitchen: 150 Pizzas, Pastas, Pestos, Risottos, & Lots of Creamy Italian Classics. Nothing like a big bowl of comforting pasta for lunch!


I have been making homemade iced tea almost daily, using two decaf green tea bags and one raspberry hibiscus tea bag for a light fruity flavour. The kids really like it too. There is sugar in it, but I'm sure it's much less than you would find in a canned or bottled iced tea and at least I know the ingredients are fully natural.


I have been so busy with my 4-month household purge that I hate to spend time cooking. I am a woman obsessed with tidying my home - in a good (and temporary) way. Long story short, I made a quick dinner by chopping up some firm tofu and an onion, frying it in a pan and adding a frozen pre-cooked rice mix. I seasoned it with Bragg's Liquid Aminos.

I ate this muffin on a different day, but I wanted to share a picture because my sister-in-law baked muffins and brought me some one day. She doesn't consume dairy and she bakes with spelt flour like I do, and it was just lovely to eat a baked good that somebody else made for once. Plus, banana chocolate chip - my favourite!

  2. Ohhh I'm curious about that spelt flour muffin! I've never baked with spelt flour before but it looks delicious!

    1. I always use light spelt flour, which easily replaces white, but if you prefer whole grain, you can experiment with whole spelt flour too. It's probably healthier. :)

  4. I can totally eat sushi everyday for the rest of my life! Veggie sushi is so healthy too. My friend who came from Japan told me that those are the kinds of sushi she's used to eating. She's literally grossed out by all the American rolls like California Rolls and Tempura Rolls!
