This vegan apple cinnamon cake recipe (no eggs, no dairy) is so easy to make, but looks impressive and tastes delicious! You'll fool your guests into thinking you crafted a complicated dessert. 

A cake that helps you get your seven servings of fruit and vegetables a day? Yes indeed! This recipe for vegan apple cinnamon cake combines two of my favourite foods - cake and fruit - in a very good way. Take a homemade vanilla cake base and swirl in a delicious mix of spicy cinnamon and sweet sugar. Top it with firm, sweet Organic Washington apple slices and bake.

As we do each September, we recently visited our favourite apple orchard to pick delicious, crunchy apples right off the tree. Plus apples are highly portable and hardy, making them an ideal snack to take to park, school or work. Of course, you could also turn them into an equally portable and possibly even more delicious snack, like these Vegan Apple Crumble Muffins.

Apple Picking Fun & 5 Vegan Apple Recipes

Oh wonderful, wonderful fall, if you could please stick around just a teeny bit longer! More sunny, bountiful days with trees full of ripe apples might just be enough to get me through winter. We were fortunate to have some free time to go apple picking with family and friends a couple of weeks ago. We headed to Avalon Orchards in Innsifil, Ontario, where you can pick your own certified organic apples.

It was a nice outing for us all - including the kids, their cousins and a friend. Everybody pitched in to fill our bags with gorgeous organic apples.

I am missing Avalon Orchards already. I think it's time to search out a great pumpkin farm where we can stroll through fields, hopefully enjoy a bit of sunshine and pick out the perfect pumpkins while soaking in nature's beauty.

Strawberry Lemonade (Juice Recipe)



When the thermometer is on the rise, it's nice to kick back with a fresh, homemade juice. Juicing can help you increase your consumption of healthy fruits and vegetables. Plus, the water content can work to prevent dehydration. If you have kids, you might possibly get more veggies into them too. In our family, my son will happily try any juice, even if it contains celery or cucumber. My daughter can only be tempted with fruit. But carrot juice is sweet, has a lovely orange colour and is easy to hide among the fruit juice!

Noodles. Yum. Probably my favourite food in the world. Well, except maybe chocolate.

Wednesday has rolled around once again, and it's time to share food highlights from the past week.

My husband made garlic noodles, breaded tofu and broccoli one night. Here's what was left for my lunch the next day. Nice to see that the family ate most of the broccoli.

Apple Crisp With A Twist


Remember when I went to the apple orchard in September? I had all of these plans to make lovely recipes to use up the apples that the kids so lovingly picked that day.

It's now (late) November and I still have a fridge drawer full of apples. The guilt is starting to eat away at me.

So, yesterday I put together this recipe for Apple Crisp With A Twist.You probably guessed from the picture that the twist in this apple crisp is raspberries. But, I really should have said twists plural, because I also added orange juice and flax seeds for extra fun!

Insta-Friday in real life


It’s Friday, and that means it's time for another week in review using cell phone photos.
This is a great excuse for me to gather a mishmash of photos under the umbrella of “Insta-Friday.” Hopefully, you can relate somehow. My mom likes my Friday pictures, anyway. That's something.
This week, I’m showing you not just the kids, but my dog as well. Dog owners are proud of their dogs—what can I say?




Here is the aforementioned dog, Jolene, looking rather obedient. She was probably hoping for a treat. That dog spends her entire life sleeping and foraging for food. If you think it’s annoying that your retriever “loves” food, get a dog like mine, with a bit of beagle in her. The lab will be looking good. Trust me.

My daughter loves to help in the kitchen. Here she is with a fruit salad she put together all by herself.

This is my shopping cart. I went to the store to get a couple of things. How many women actually ever walk away with a couple of things? And, is it just me, or do the rest of you enjoy looking into other people’s shopping carts? I like to determine who they are shopping for, whether they live alone, if they are addicted to junk food—the list goes on. Also, I always wonder, do they train the store clerks not to ask about your food choices? Because they almost never comment.

My son was all happy the other day because his quesadilla looked like Pac-Man. There’s even an “eye.”

On Sunday, we had this dinner that I talked about earlier in the week. The kids actually ate pretty well. The secret is to starve them for a few hours.


Right after that, the kids wanted something else. They ate some apples. Kids are funny, because they don’t care what order they eat the food in. The Sweet Marie bars would definitely be last for me.

We also made waffles last weekend, from a recipe in Vegan Brunch. We haven’t made them for years, and now I remember why. It took me longer to clean up the overflow of batter than it did to make the waffles.

I also made this yummy marbled banana bread from Post Punk Kitchen. I didn`t quite get the swirl right, but it was tasty.

Freedom

While the book club gals and I were chatting over tea last week, our husbands and children took a trip to Avalon Orchards to pick some lovely organic apples. It was nice to know that they were enjoying fresh air and exercise while we were enjoying conversation and companionship. On that sweet Sunday of simple pleasures, we all took a break from the hustle and bustle of everyday life to rejuvenate our spirits. With the daily commitments of school, homework and activities, even our children are often confined by strict schedules. The apple orchard offers the perfect respite, providing fresh air, the beauty of nature and, of course, the chance to sample some delicious apples. All of the children came back happy and proud to show off the apples they had carefully picked. The bonus is, they have been eating them ever since.
