These fast and easy vegan apple cinnamon crescent rolls are incredibly delicious, like little three-bite cinnamon rolls with a tasty apple surprise in the middle.

In my last post, I shared a recipe for easy vegan apple turnovers. These pockets of sweet apple goodness are delicious and so simple to make, with the help of puff pastry. But I didn't stop there, because yes, apple turnovers are easy to make, but a yummy apple dessert can be even easier and faster to prepare. For this tasty and fast dessert option, you will need a short list of ingredients - refrigerated crescent rolls (Pillsbury Crescent Rolls are "accidentally vegan"), vegan margarine, coconut sugar or brown sugar, ground cinnamon and a Cosmic Crisp apple. The filling of this recipe reminds me of the classic cinnamon rolls my granny would make, without the full day of work. 

To start, preheat the oven to 375°F and line a baking sheet with parchment paper. Unroll the packaged crescent roll dough and separate into 8 individual triangles. Place each triangle onto the prepared baking sheet.

Slather the crescent roll dough triangles with margarine using a butter knife.

Stir together sugar and cinnamon in a small bowl, and then sprinkle the mixture equally over each triangle. I like to use coconut sugar for a somewhat healthier take on the classic cinnamon roll, but brown sugar is obviously lovely too.

Place 2 to 3 thin apple slices over the wide end of each crescent roll triangle. Then roll up each triangle, starting at the wide end and tucking in the apple slices as you roll. Tuck the point of the triangle over the top of the roll, pressing down slightly. Adjust the edges as needed.

Bake the apple cinnamon crescent rolls for 10 to 12 minutes until golden. Set aside to cool.

Enjoy these treats while still slightly warm or store them in a tightly closed container for a couple of days once they are cool. We actually haven't ever had any around after the first day so I can't reliably tell you how long they stay fresh, but I think two days is your best option.

You can top them with an icing sugar glaze - simply stir together icing (confectioner's) sugar with a few drops of non-dairy milk. But I suggest shaking things up a bit with a chocolate glaze. You'll end up with something like a chocolate-drizzled croissant with tender, sweet apple chunks inside. Cinnamon roll, crescent roll, croissant - it doesn't much matter what you call these bites of tasty goodness. You just have to eat 'em (and enjoy 'em!).

To make the optional chocolate glaze, simply add semi-sweet (dairy-free) chocolate chips to the top of a double boiler with a splash or two of non-dairy milk and a teaspoon of corn syrup (for a smoother, shinier chocolate glaze). Gently heat water in the bottom of the double boiler, stirring the chocolate mixture as it melts. Adjust the non-dairy milk and corn syrup as needed to create a thinner glaze. Drizzle chocolate onto cooled apple cinnamon crescent rolls.

Ingredients
  • 1 package of refrigerated crescent rolls
    1 tablespoon vegan margarine
    2 tablespoons coconut sugar or brown sugar
    ¾  teaspoon ground cinnamon
    1 Cosmic Crisp apple, peeled, cored and thinly sliced

    For optional chocolate glaze:

    ½ cup semi-sweet chocolate chips

    splash or two of non-dairy milk, such as soy milk

    1 teaspoon corn syrup (optional, for a shinier chocolate glaze)



Instructions

Preheat the oven to 375°F. Line a baking sheet with parchment paper.


Unroll crescent roll dough and separate into 8 triangles. Place on prepared baking sheet.


Spread margarine over each triangle. Stir together sugar and cinnamon in a small bowl. Sprinkle sugar mix over each triangle.

Bake for 10 to 12 minutes until golden. Set aside to cool.


For the optional chocolate glaze, add the ingredients to the top of a double boiler. Gently heat water in the bottom of the double boiler, stirring the chocolate mixture as it melts. Add more splashes of milk and corn syrup as needed to thin. Remove from heat when desired consistency is reached.


Spoon melted chocolate over cooled apple cinnamon crescent rolls.
