Healthy Apple and Cinnamon Baked Oatmeal With Cosmic Crisp Apples (Vegan, Gluten-Free)

Vegan Baked Oatmeal With Cosmic Crisp Apples

This healthy, plant-based vegan apple and cinnamon baked oatmeal recipe gets an added nutrient boost from diced fresh apples. It's delicious, filling and simple to make for a hearty breakfast, snack or even dessert!

If you watch food and recipe videos on Youtube, you can't help but see how popular oatmeal is for a healthy breakfast. Personally I find there's a limit to how many bowls of oatmeal (aka porridge) I can eat. For a (delicious) change, baked oatmeal is a nice choice. You get the health benefits of oats - they help you feel full, they are a good source of fibre, they may lower blood sugar levels and they contain important vitamins, minerals and antioxidants - in a different, palate-pleasing, almost dessert-like format.

For a nutritional punch that can't be beat, add apples to your baked oatmeal. This apple and cinnamon baked oatmeal calls for Cosmic Crisp Washington Apples, a new and tasty apple variety that's been in development for two decades. Cosmic Crisps are classically bred (non-GMO) to be crispier and sweeter than other apple varieties and naturally slow to brown.

Instant Pot (Pressure Cooker) Maple Pecan Oatmeal Recipe & 6 More Amazing Vegan Breakfast Recipes

Oatmeal is oatmeal is oatmeal. Yes? With the resurgence in popularity of this classic grain, we know that's not so. Oatmeal can be thick, cold and clumpy. (My granny used to make it early in the morning and leave it on the back of the stove for my mom and her brothers to eat much later. Eek.) Oatmeal can also be creamy, warm and delicious, with lots of flavourful and healthy toppings. I vote to eat it that way. With that in mind, I'm sharing my simple recipe for steel-cut oats cooked up in the Instant Pot. There are endless ways to flavour your oatmeal - in this case I'm going with maple pecan. Because I'm Canadian. So maple syrup.

Plus, I've joined together with some vegan blogging friends to share six more amazing plant-based breakfast recipes. Trust me, they are mouthwatering. You'll want to get together with friends and make all of these recipes, for a fantastic vegan brunch.

What I Ate Wednesday, sweet tooth edition and a giveaway

Happy What I Ate Wednesday! I'm sharing some food highlights from the week as usual, but this week I also enjoyed a few great snacks that I want to tell you about.

I have a fierce sweet tooth and I have always loved jelly beans. What I don't like is artificial colours. Not good for anybody, especially children. Luckily, there is a delicious alternative.

Oatmeal Everything Cookies - My Fave Vegan Oatmeal Cookies!

Oatmeal Everything Cookies - My Fave Vegan Oatmeal Cookies!

These delicious vegan oatmeal cookies are packed with nourishing ingredients like whole oats, sesame seeds, sunflower seeds and flax.

I don’t know about you other parents, but I like to send my kids out for their Halloween hunt with a full stomach. Although Halloween often falls on a busy weeknight, I attempt to ensure that they eat a healthy dinner that covers at least three of the major food groups. It might seem counter-intuitive, but how about offering some dessert?

Most kids aren’t going to turn down dessert, and if it’s a homemade dessert filled with some nutritious ingredients, they will have less room to fill up on all the Halloween goodies. (That is, unless your child is like my dog and will eat until they can literally eat no more. But that's unlikely.) That's where this recipe for vegan oatmeal cookies with "everything" in them comes in handy.

Insta-Friday in real life, March Break begins

Once again, this Friday, I am taking a look at our cell phone photos from the past week. This is a special Friday, because it’s the first day of March Break for the kids, and for my teacher-husband too.
We started off celebrating last night with a few chocolate goodies and a family movie night.
The kids picked All Dogs Go to Heaven 2 on Netflix. It’s an animated film, starring the voice of Charlie Sheen, pre-public meltdown. I confess I started to tune out early on during a painfully long introductory scene. I decided to play a game of Brain Age 2: Virus Buster while “watching” the movie.
Today, the fun continues. How to occupy the kids for a week with minimal fighting…
I can’t help but remember our March Break last year, when we went to Clearwater Beach, Florida, for my sister’s wedding. In the past, pre-kids, my idea of a great vacation was a trip to Europe, sightseeing and visiting museums and galleries.
I was a changed woman once I experienced the beautiful weather in Florida, and the opportunity to swim during our painfully long winter. We also had a great time with my sister and her new husband and the friends who joined us in Florida.

This picture of my son and my husband trying on some "hockey hair" in a Clearwater Beach tourist shop is a fond reminder of our vacation.

I am still working on the photobook of our vacation (talk about procrastinating). In the meantime, I also have this grouping of photos to remind me of the fun we had.

This year’s vacation will be much more low key. My daughter is spending her first day off operating a “book store" in our house.

She has set up some books and a cash register and also distributed flyers.

The flyer says the books are free, but maybe that’s just to draw people in…there is a cash register after all.
In other news from the week, my son got to go snowboarding again. We had a light dusting of snow last night, but I think that just might have been his last trip this year.

Last weekend, the kids proudly made their own lunches.
My son also painted a sweet little portrait. It’s not a picture of himself, but he says it “looks a little bit like me.”
I made a pinto bean and spelt elbow pasta bake with tortilla chips on top. It wasn’t that great, but the chips were nice.
Today’s breakfast was my usual oatmeal, ground flax, fruit and soy (or rice) milk combo. I love it when we have fresh berries in the house.
How was your week? I would love to hear about it!

A kick-starting cleanse

Okay, I admit it. Christmas is over.

I started making all kinds of sweets before Christmas and I have kept it up into the new year. My body has been protesting, so I have decided to kick my sluggish system into gear by doing a little bit of a cleanse. Yes, I am jumping on that bandwagon.
I am not totally giving up sugar—don’t get crazy now. And, I am not doing any fasting—what joy is there in a life without food? I am simply staying away from wheat and dairy. I am not going totally gluten-free—I am still enjoying spelt and kamut flours and pastas. I, like many people, find they are easier to tolerate than regular wheat products.

I am also cleansing my system with twice-daily “shakes” (they are really too disgusting to be called that) made from water, 2 tsp powdered psyllium husks, 2 tsp bentonite clay and a little bit of cranberry juice.
Here’s a look at the menu I enjoyed on the first day of my cleanse. It was really easy and didn’t require more work than usual.

Breakfast
My breakfast is basically the same every day, either oats or quick quinoa flakes (pictured).

Quick cooking steel cut oats with fresh blueberries, sliced banana, 1 tbsp ground flax and vanilla almond milk
1 tsp Natural Calm magnesium supplement dissolved in warm water

Lunch
1 tsp apple cider vinegar (to calm my stomach)

Buckwheat sweet potato noodles with gluten-free teriyaki sauce
Sol Original veggie burger with organic ketchup (no bun)
Corn

½ package Emergen-C vitamin C supplement in water
Dinner

My daughter wasn’t feeling well, and had a craving for pancakes, so:
Spelt flour banana blueberry flax pancakes with Earth Balance margarine and maple syrup
Scrambled eggs

1 tsp apple cider vinegar

Evening
Lundberg Farms Sante Fe Barbecue rice chips
Traditional Medicinals Eater’s Digest tea (the best tea ever for digestive issues)

Add to that lots of water and some vitamin D (because we aren’t getting any sun right about now)
Anybody else cleansing? I’d love to hear your plan.
