Compared to the quick and carefree days of summer, winter can feel long and oh-so challenging. My Andros Island Bucket List
Guess what? Before you know it, winter will be here! Did you hear that ominous music just then? Winter around these parts is loooong. Come fall, I start dreaming about an escape. I have been doing some research and I think I have found just the place to retreat to in winter (or right now for that matter).
It's called Andros Island in the beautiful Bahamas and it's an actual paradise right here on Earth. Andros is the largest of the Bahamian islands (at 2,300 square miles), yet it is also the most sparsely developed. That makes for an abundance of natural beauty, perfect for nature lovers. This island gem boasts the third-largest fringing barrier reef in the world. It is home to miles of deserted beaches and freshwater lakes with countless species of wildlife, marine life, flora and fauna.

What I Ate Wednesday
Happy Wednesday! For those of you who seem to be stuck in a snow globe, not to worry, someone will break us out soon...I hope. In the meantime, cuddle in tonight and put the fireplace on (for the last time?). Enjoy a hot cocoa, read a great book and bid winter farewell in style. Or just have a good cry. Whichever.
I have so many hopes for spring and the renewed energy it brings. I'd like to go through my wardrobe and discard a bunch of clothes. I'd like to get rid of the magazines piled in my bedroom and have the upstairs carpet professionally cleaned. I'd like to freshen up the interior of my filthy car. The list goes on and on. For now, I'm focusing my limited energies on one area - the kitchen. I am trying to get it back to "clean" every evening (no small feat) and I am experimenting with new, healthy recipes and meal ideas.

We are two months in now and I'm craving sunshine and a bit of warmth (above zero would be fine). A trip to Hawaii not being in the cards, I turned to registered nutritionist Emily Kennedy for advice about beating the winter blues through a vegan diet.
"Vegan or not, many of us feel low in energy and a little grumpy at this time of year," says Emily. "For vegans, consuming warming foods that are rich in essential fats that will help you absorb fat-soluble vitamins (like D) will help you through to the asparagus and sweet peas of spring and summer."

A perfectly peaceful vacation
As Christmas vacation comes to a close, I thought I'd take a look back at two lovely weeks. While the first few days of vacation took place prior to Christmas and so were a whirlwind of cleaning, cooking and other preparations, the time following Christmas was one of the most relaxing periods I have enjoyed in recent years.
There were a lot of late nights watching movies, a fair bit of sleeping in late and a great deal of time spent in pajamas throughout the day.

I have had an interesting week. My son stayed home with me one day when his class went tubing. He didn't want to go tubing for an entire day.
Unfortunately, the trip fell on a day when he had lost his TV and iPod privileges. This was the result, above.

Insta-Friday I'm In Love
Have I told you lately that I love you? Make fun of me if you want (mom), but you guys are awesome. I started this blog to help me appreciate the beauty in each and every day. Even if sometimes I'm grumpy...really grumpy. I need reminders of how great life is even more on those days.
I wasn't sure anyone would ever actually read my musings. But I'm happy to say I have almost 400 GFC followers now, over 100 Bloglovin' followers and about 16,000 page views a month. I'm no celebrity, sure, but it's kinda cool that people take the time out of their busy schedules to visit my blog. So thanks. A lot.

Bold Berry Muffins (vegan)
After you finish all of your daily tasks—because, let’s face it, you probably don’t have household staff—and before you settle down with a book, whip up a batch of these bold tasting vegan berry muffins. These muffins are moist and flavourful with delicious bites of fresh, tasty and nutritious blueberries and raspberries. But you can substitute any berries (or even other fruit) that you wish.

I turned to Dorothy Harrington’s sweet little poetry book Little Things for inspiration today, and found this charming poem that looks at the brighter side of March.
March Evening
What do I care though the cold winds blow,
For here before my fire
I reign supreme, like an ancient queen,
With my radio for lyre.
And at my feet, in bliss complete,
Sits my son in Arthur’s Court;
While on the mat, chewing a hat,
Lies our dear old Collie—Sport.
The room is warm, the lamp glows soft,
All here are so contented
The maddening winds beat on my door
With fury quite demented.
For here before my fire
I reign supreme, like an ancient queen,
With my radio for lyre.
And at my feet, in bliss complete,
Sits my son in Arthur’s Court;
While on the mat, chewing a hat,

I love this picture of simpler times, when the radio was the only foreign sound in a room, and children were entertained by their imaginations.

Insta-Friday in real life

As I write this, the snow is coming down outside. Just when we thought winter was over. There's not too much accumulation yet, which makes me wonder why the school buses were cancelled today. My daughter insisted on going to school anyway, while my son was thrilled to be able to stay home.
He and I took the dog for a walk, and enjoyed a brief episode of snow tubing before the dog took off from us and we had to chase her through park and then parking lot. If anyone has any dog training tips, I would love to hear them!
Anyway, here are some highlights from our last week, in cell phone photos.
Last weekend, my kids finally got to use the snow tube that my brother gave them for Christmas. I took a spin on it myself. It makes for a pretty smooth ride!
We followed up our tubing adventure with a visit to my mother-in-law and father-in-law, otherwise known as Nonna and Papa. They live about an hour and a half’s drive away. My sister-in-law and her family joined us, and the kids had a great time laughing and eating Nonna’s food together. My son was so happy to be with his “boy cousins,” since he doesn’t get to see them as often as he would like. My daughter also enjoyed seeing one of her beloved “girl cousins.”
My husband and I enjoyed seeing the whole gang, and, of course, eating Nonna’s food. We only told her we were coming a few hours before dinner time, so we offered to pick up some take-out. But, she would have none of that. I don’t know how she does it, but she had a whole big meal waiting for us. You can see in the pictures the ravioli and spaghetti that the others so enjoyed, the kamut penne that I had, and a dinner plate of: breaded and fried tofu, salad, cauliflower, asparagus and roasted potatoes. Nonna finished with a lovely fruit platter. We later had espresso or tea and a platter of chocolate chip bars that I made from a recipe in How it all Vegan.
On Tuesday, we had fun watching my son and his friends participate in a dribble, jump and shoot competition.
Tuesday was also Pancake Tuesday, and we made pancakes with money in them, as I mentioned earlier in the week.
On other nights, we tried a couple of new recipes, including quinoa with portobello mushrooms and zucchini.
I also made Hannah’s delicious Coconut Vodka Sauce and served it on penne with sides of baked tofu and broccoli with garlic, olive oil and salt.
You know I had to have some sweets too! Besides making my favourite banana bread and some yummy berry oat bars, I also made these berry muffins from a recipe in Vegan Brunch.
When all of this eating occasionally upsets my tummy, I turn to my tea drawer. (It was once a tea chest, but the increased varieties necessitated a tea drawer.) For real tummy emergencies, my go-to brand is this Traditional Medicinals Eater’s Digest tea. It just works somehow.

All or Nothing Granola Bars (Vegan Recipe)

Today is Family Day in Ontario, a holiday dedicated to celebrating the importance of families and family life. Let’s face it, with the winter here being what it is (about five months long), we will use any excuse for a holiday that breaks up the monotony.
That being said, it is indeed a great opportunity to spend quality time doing something productive with your family. Our schedule for the day was chosen for us, as my son’s soccer team participated in a couple of exhibition games at a local sports facility.

Cozy up with a cupcake - Vegan Peanut Butter Chocolate Chip Cupcakes
Now that the bitter cold weather has arrived in our area, it’s time to spend our free hours cozying up indoors, enjoying a fire and drinking a cup of hot chocolate. Unless you’re going skiing, of course, but I’m not much of a sports enthusiast. Whether you’re playing a board game, watching a family movie, or reading a great book, I can’t help but think that a little treat would add to your enjoyment.
These easy peanut butter cupcakes, adapted from a recipe from La Dolce Vegan!: Vegan Livin' Made Easy
Next time I make them, I’m going to put a little jam in the middle of each one for a delicious surprise in the centre.

Peanut Butter Chocolate Chip Cupcakes

Cook Time: 20 minutes

Ingredients (10 to 12 cupcakes)
- 1 cup light spelt flour (or flour of your choice)
- ¾ cup sugar
- 1 tsp baking powder
- ¼ tsp salt
- 2 Tbsp natural peanut butter
- 3 Tbsp margarine
- ½ tsp vanilla
- 1 banana
- 1/3 cup almond milk
- ½ cup chocolate chips
Instructions
Preheat oven to 375°F (190°C).
Line a muffin pan with 10 to 12 paper cups.
In a medium bowl, combine the flour, sugar, baking powder and salt.
In a food processor, blend together the remaining ingredients, except the chocolate chips.
Combine the flour with the wet ingredients.
Spoon the mixture into paper cups and sprinkle the tops of the cupcakes with chocolate chips.
Bake for about 20 minutes. Simple and yummy!
