What I Ate Wednesday
Sometimes I just feel too tired (lazy?) to go grocery shopping. And then it becomes slim pickings for meals and snacks around here. Especially through six solid months of winter. Fortunately with the arrival of spring comes renewed energy, and I have been hitting up the grocery store regularly to replenish our stock of fruits and veggies. Having lots of fresh produce in the kitchen means a much healthier week for me and my family. It always reminds me of the advice that raw chef Pedja once gave me for adding more raw foods to our diets - add healthier choices to your diet and they will naturally begin to replace the unhealthy foods by sheer volume. And, surround yourself with fresh fruits and veggies. Simple and powerful.

Heavenly Hemp Seed Banana Chocolate Chip Muffins (Vegan)
I love all kinds of muffins - apple crumble muffins, double chocolate berry muffins, strawberry muffins - but I think my all-time favourite muffin recipe is banana chocolate chip. The bananas lend a natural, gentle sweetness that pairs nicely with the chocolatey hit from the chocolate chips. The bonus to banana muffins is they also help you to use up those aging, spotted bananas on your kitchen counter!

What I Ate Wednesday - let's talk breakfast!
Breakfast is the most important meal of the day, right? So why do we pay it the least attention? Well, maybe you don't. But I do. Besides on the weekends, I don't really want to put a lot of time into preparing breakfast. It has to be quick and tasty.
Inspired by my children, I had a bagel topped with peanut butter and banana for breakfast today. The banana slices are certainly healthier than the jam I usually choose to sweeten up my peanut butter.

Spelt Banana Chocolate Coconut Muffins
Okay, I'll admit, "Spelt Banana Chocolate Coconut Muffins" doesn't exactly roll off the tongue. The thing is, there are so many versions of banana muffins that I had some trouble distinguishing my latest favourite from all the others.
This version calls for light spelt flour, which I use often. It's gentler on some tummies (like mine) than regular all purpose. "Wheat Belly" author Dr. William Davis says spelt, kamut, oats, amaranth and buckwheat are "evolutionary older forms of wheat." He believes that the most harmful glutens are the recent types created by geneticists. He says ancient wheat forms like spelt contain "less destructive" forms of gluten. While he recommends no gluten at all, I think some of us aren't quite ready for that yet.

Banana Muffins With Vegan Mayo
Nasoya sent me a couple of bottles of their vegan sandwich spreads recently. I tried the new NayoWhipped on my veggie burger and found it added a nice, tangy taste. Overall, though, we tend to use vegan mayonnaise more in the summer months, when I like to make potato salad for gatherings.
In the meantime, Nasoya pointed me to the recipes on their website for ideas as to how to use my new sandwich spreads. I am a big fan of muffins, so I was immediately drawn to the recipe for vegan banana muffins. I already have a favourite banana muffin recipe, but I thought perhaps I should be a bit adventurous and try another recipe.

What I Ate Wednesday with a pink pear smoothie
Happy Wednesday!
I have been trying to eat "cleaner" this week. While my eating habits are pretty good overall, I do have a wee bit of a sugar addiction. So, this week I am getting my sugar in the form of fruit, starting each day with a smoothie of some kind.
If you are looking for smoothie recipes, visit my post about the pineapple spinach smoothie I made the other day. That day I happened to have fresh pineapple in the fridge. Another day we had a few pears lying around getting soft, so I decided to put pear in my smoothie.

What I Ate Wednesday, Tuesday eats edition
This What I Ate Wednesday, I am looking at all of the food I consumed on Tuesday.
Let's start with breakfast. I just went grocery shopping on Monday, which means there was still fresh fruit in the house. I enjoyed some Nature's Path pumpkin flax granola with peach slices, raspberries and soy milk. I also had water with Emergen-C in it. I have had a crackle in my throat for a few days, so I am trying to ward off any illness. I added a clementine for good measure.

What I Ate Wednesday, new grocery products edition
It's Wednesday. You know what that means. Yes, it's "hump day," and by lunch-time your work week will be half over. But, it's also What I Ate Wednesday!
I look forward to seeing what everybody ate this week, when I link up with the other girls over at Peas & Crayons.
I am sharing some highlights from my eats over the past week, starting with a special treat. My mother-in-law gave us six jars of her homemade marinated eggplant last week, so my Saturday lunch included almost a whole jar, served on rice crackers. It was delicious. I was going to make some myself, but now I don't have to!

What I Ate Wednesday, I love lasagna edition
For this, my third “What I Ate Wednesday,” I am once again sharing some food highlights from the past week.
I had an amazing lunch on Sunday when we visited my sister-in-law and her family for the day. My mother-in-law joined us, bringing along her special non-dairy tofu lasagna. We all marvel at how brilliantly tasty it is, without the usual lasagna ingredients.
She also breaded some Japanese eggplant. The picture just doesn’t do it justice. Delicious.

The cleanse continues
In search of better health and wellness, I continue with my gentle cleansing routine.
Because, as we know, one of life’s essential pleasures is food, I am still enjoying little treats along the way:
I am starting each day with a mix of water, 2 tsp powdered psyllium husks, 2 tsp bentonite clay and a little bit of cranberry juice. I’m finding that I am very thirsty, so I think you need to drink (much) more water than the psyllium package recommends.
My breakfast is still mainly quick quinoa flakes or quick cooking steel cut oats with fresh blueberries, sliced banana, 1 tbsp ground flax and vanilla almond milk.Because, as we know, one of life’s essential pleasures is food, I am still enjoying little treats along the way:
· EnviroKidz peanut butter rice crispy bars
· a dairy-free, gluten-free chocolate peanut butter bar from the health food store (so yummy)
· a smoothie made with spinach, kale, banana, dates and strawberries (also from the health food store)
· a spelt flour banana muffin from a local bakery
· clementines, bananas
· my favourite oatmeal berry bars (made with spelt flour)
Recent lunches:
1. Sesame rice crackers with dairy-free baba ganoush; green salad with carrots, walnuts and craisins; dried apricots
2. Riceworks rice crisps with hummus
3. Leftovers of the following dinners—don’t you love a hot lunch?
Recent dinners:
1. Extra-firm tofu sliced, marinated with Premier Japan’s gluten-free teriyaki sauce, olive oil and garlic powder, and baked; VitaSpelt pasta elbows with chickpea and tomato sauce (recipe was on the pasta box); salad
2. Minestrone soup
3. Brown rice topped with sweet potato and lentil stew (using a recipe from The Kind Diet by Alicia Silverstone)
By the way, I did throw in a couple of rum and ginger ales on Sunday. Apparently that’s a gluten-free combo!Friday, January 20, 2012
Insta-Friday in real life

We decided to treat ourselves to a platter of veg sushi last weekend. I whipped up some miso and tofu soup to go with it. Shockingly quick and easy, with a recipe from Robin Robertson’s Vegan Planet.
A week doesn’t go by without some sweets around here. I made some peanut butter chocolate chip cupcakes, some banana chocolate chip muffins and some more of my favourite—date squares.
My sister gave us a popcorn maker for Christmas. I love the vintage look of it, and it makes Friday’s after-school snack super quick and inexpensive. I also made an old favourite for dinner one night—“Hearty Winter Potato Soup” from How it all Vegan. It isn’t the prettiest, and the kids thought it would be gross, but my son ended up enjoying it.
My daughter came home from school feeling really tired yesterday. She didn’t even want her snack—not a good sign. She fell asleep right away (unheard of for this little ball of energy). She started out alone on the couch and then Jolene decided to keep watch over her. The dog isn't even allowed on the couch, but I couldn't bring myself to move her. With the resilience of youth, my daughter’s already starting to feel better today.

Cooking Skinny Bitch Style
I bought another cookbook. What can I say…it’s an addiction. This one has been well worth the expense, though. I bought it a few weeks ago and I have already made several of the recipes, some of them more than once.
It’s called Skinny Bitch: Ultimate Everyday Cookbook, by Kim Barnouin. I also have a copy of Skinny Bitch In the Kitch, which I picked up at a library book sale, but I never warmed to it. Something about all of the intentional swearing and the use of fake meats turned me off. But, I have so enjoyed this newer book that I might just give the other a second chance.
First, I want to say I don’t think there is anything particularly “skinny” about the recipes. But they are healthy, and they use mainly whole foods that are already on my shopping list. (I don’t know if almond milk is on your shopping list, buy hey, give it a try if it isn’t! ) I hate nothing more than a long list of hard-to-find (and expensive ) ingredients. | Butternut Squash Soup with Poppy Seeds |
I did do some planning after I bought this book, though. I picked out a number of recipes from it and then shopped for the whole week. Having a clear plan sure makes it easier when it’s time to cook.
Barnouin’s Banana and Cinnamon Muffins offer a new and delicious twist on the vegan banana muffin, with a crunchy topping that makes them look nice for company. Next time I’m going to make sure there is some company around when I make them, because they are best eaten the first day. The Coconut Banana French Toast was sweet and tasty, and my son said it tasted like “deep fried banana tempura.” He also liked the Coconut- and Almond-Crusted Tofu, which he called a “treat.” I have also made the Pumpkin Pecan Banana Bread (pictured at top). I am looking forward to trying the Spaghetti with Spinach in a White Wine Garlic Sauce and the Strawberry Cupcakes. If only someone could make them for me…

Favourite Foods, Part Two, Never-Fail Banana Oat Muffins (vegan)
While I'm not a huge fan of cooking (and having to get together a healthy, satisfying meal for a family of four on a daily basis), I do love to bake. Probably because I love to eat sweets. Especially homemade vegan baked goods. I like to know what is in my food, and what isn't in my food, like all kinds of chemicals with names I can't pronounce. And baked goods also make nice snacks to send in the kids' lunches or to grab for a quick mid-morning or afternoon snack.
