What I Ate Wednesday


Happy Wednesday friends! There have been a couple of pretty darn hot days around here this week. Our air conditioner still isn't working - we are awaiting our trusted repairman, who is recovering from an operation for another week or so.

I'm not really good (at all!) at withstanding heat. Let's just say I don't get as much done as I would like when the house is 35 to 40 degrees Celsius inside! I have been careful to stock up on lots of delicious and refreshing fruit. I really crave fruit in summer and I find the whole family will eat lots of fruit if I wash it and put platters of it out regularly.

Celebrate National Organic Week (Giveaway - CLOSED)


It's Canada's National Organic Week (September 19 to 27), the largest annual celebration of organic food, farming and organic products across the country. I prefer to buy organic whenever availability and finances permit. My son went through a period during which he thought "organic" was a dirty word, something along the lines of "spinach" or "kale."

Heavenly Hemp Seed Banana Chocolate Chip Muffins (Vegan)

Mmmm...banana chocolate chip muffins. There's nothing better on a cold morning than a warm baked banana muffin and a hot cup of tea. Let the wind bluster outside and take a moment to enjoy a homemade, tasty, nurturing baked good before starting your busy day. No time? Bake a batch of banana muffins on the weekend and freeze them individually. Then grab a homemade banana muffin to take to work for your mid-morning coffee break! Once I started making homemade muffins, I couldn't stand the fluffy, cake-like ones from the stores anymore.

I love all kinds of muffins -  apple crumble muffins, double chocolate berry muffins, strawberry muffins - but I think my all-time favourite muffin recipe is banana chocolate chip. The bananas lend a natural, gentle sweetness that pairs nicely with the chocolatey hit from the chocolate chips. The bonus to banana muffins is they also help you to use up those aging, spotted bananas on your kitchen counter!
