Heavenly Hemp Banana Muffins

Mmmm...muffins. There's nothing better on a cold morning than a warm muffin and a hot cup of tea. Let the wind bluster outside and take a moment to enjoy a homemade, tasty, nurturing baked good before starting your busy day. No time? Grab a muffin to take to work for your mid-morning coffee break!

Once I started making homemade muffins, I couldn't stand the fluffy, cake-like ones from the stores anymore. The kind of muffin I crave most often is banana. I think that also has something to do with the aging bananas that often sit on our kitchen counter!

One day recently, I noticed those aging bananas were right next to a bag of shelled hemp seeds that I bought but sometimes forget to use. So, I decided to modify my standard vegan banana muffin recipe to incorporate healthy hemp. Shelled hemp seeds are a great way to add essential fatty acids and protein into your diet.  I used Manitoba Harvest Hemp Hearts, which contain 10g of protein and 10g of omegas per serving.

I lowered the usual temperature of the oven to minimize the impact of heat on the hemp seeds. I also included large flake oats in the recipe to give the muffins some nice body. And I added chocolate chips. Just so the kids would eat the muffins. Nothing to do with me and my constant cravings for chocolate.

Anyway, here's the recipe. These muffins are super quick to make. Quicker than going to the store to buy those big cakey muffins. And much healthier. Give the recipe a try and be sure to let me know how it goes!

Heavenly Hemp Banana Muffins

Ingredients (10 to 12 muffins)
  • 1 1/3 cups light spelt flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup oats
  • 1/4 cup shelled hemp seeds
  • 2 bananas
  • 1/3 cup grapeseed oil
  • 1 tsp vanilla
  • 2/3 cup non-dairy milk
  • 1/2 cup semi-sweet chocolate chips


Preheat oven to 325°F. Spray a muffin pan with cooking spray or line with paper muffin cups.

In a large bowl, stir together the flour, brown sugar, baking powder, baking soda, salt, oats and hemp seeds.

In a blender, process bananas, oil, vanilla and non-dairy milk until smooth. Pour the wet ingredients into the dry ingredients. Add chocolate chips. Stir until just mixed. Spoon into prepared pan.

Bake for about 25 minutes or until a knife inserted in the centre of a muffin comes out clean.
