What I Ate Wednesday, Father's Day edition
Happy Wednesday! The kids are in school for just one more day, so I'm busy trying to organize the house. I figure if we start off clean there may be some small hope that I can keep things tidy...for a couple of days anyway. We are holding a family meeting to begin summer vacation, because mama needs to discuss how people need to tidy up after themselves - I think a chores chart may be in order too!
But right now I'm supposed to be discussing food. This plate above represents the Father's Day brunch I put together on Sunday. My husband had his on a tray in bed, and it looked much nicer than this, but this is the plate I sat down with. Vegan blueberry pancakes, scrambled tofu with mushrooms and salsa, Yves veggie sausage, strawberries and peanut butter banana muffins.

Menu Plan, 8/52
If it weren't for my menu plan, posted here for all to see, I don't think I would have made a darn thing this past week. I was slow, sluggish and irritable for most of the week, and I'm not even sure why. I just kept telling myself, "One day you'll wake up magically feeling better." It's always worked before.
I also started popping more Vitamin D, because that very well could be part of the problem. Time for spring now...please. In the meantime, I am chugging back warm beverages like decaf coffee and green tea. I'm also listening to soothing music. Right now I have the "Fireplace Folk" channel running on Songza. Simon and Garfunkel is playing at the moment. As I said in this post, they always remind me of thrift shopping with my friend back in high school.

A Menu Planning Challenge, week two

Last week, I created my first weekly menu plan for the year. Before I get to this week's plan, I would like to do a bit of a review of how last week's meals turned out.
I based Monday's Vegan Sausage and Rapini Melt on a sausage on a bun recipe in Chatelaine magazine.

A Menu Planning Challenge
I am finally joining my (crazy fit) buddy Laura for her menu planning challenge.
I always think about planning my meals for the week, but I rarely do it...at least not in any really successful way. But it's a new year and a perfect time to re-examine my priorities.
