What I Ate Wednesday


I'm keeping it short and sweet this What I Ate Wednesday. I had planned to share a look at everything I ate on Monday, but we ended up going shopping for my son's school project in the evening. Which meant grabbing a veggie burger, fries and a pop at Harvey's. And then a stomach ache for the rest of the night (from the bubbly pop). And no photo. Just quick and greedy consumption of the aforementioned take-out meal!

But I did get a photo of my breakfast, above. My husband made a quick spelt bread in the breadmaker the night before. I had the very last slice that was left of it the next morning, topped with peanut butter and jam. I also had a couple of slices of the Banana Ginger Medjool Date Mini Loaves that I made on the weekend. The recipe is for an upcoming post. You will want to get this recipe. Not to brag, but these ordinary-looking little slices are incredibly delicious and moist.

Menu Plan, 8/52



If it weren't for my menu plan, posted here for all to see, I don't think I would have made a darn thing this past week. I was slow, sluggish and irritable for most of the week, and I'm not even sure why. I just kept telling myself, "One day you'll wake up magically feeling better." It's always worked before.

I also started popping more Vitamin D, because that very well could be part of the problem. Time for spring now...please. In the meantime, I am chugging back warm beverages like decaf coffee and green tea. I'm also listening to soothing music. Right now I have the "Fireplace Folk" channel running on Songza. Simon and Garfunkel is playing at the moment. As I said in this post, they always remind me of thrift shopping with my friend back in high school.

What I Ate Wednesday, Soup's On...and a winner


Can you believe it's Wednesday already? That means What I Ate Wednesday...to me anyway. I'm into stuff like that.

We had an unseasonably warm day a couple of days ago. Well, in the morning anyway. In the afternoon, it turned cold and rainy. All of that is to say that normally, from September to...oh, about May, we have good soup weather around here.

As the day goes on, my enthusiasm for cooking generally wanes. That's why I love the slow cooker. Throw a simple soup together when my energy is high in the morning, add bread and a salad in the evening, and dinner's on the table! On this particular night, pictured above, I paired the soup with a corn muffin, made from a recipe in How it All Vegan. This black bean sweet potato slow cooker soup is based on a recipe in Fresh From the Vegetarian Slow Cooker, a book I highly recommend. I have mixed black beans and kidney beans and added some sweet potato. I also reduced the amount of thyme, because I don't like a strong flavour of thyme. The recipe follows. If endorsements might convince you to try making this, you should know that my kids actually said this soup was good. That kind of high praise doesn't often come from those two...when it comes to healthy meals anyway.
