What I Ate Wednesday, with Easter Dinner & A Salad Challenge!


We had a quiet Easter this year. As much as we would have liked to go visit family, we were all feeling a bit burned out, and the thought of packing up all the stuff for the kids and the dogs was just too much for us. So we had a nice simple vegan/vegetarian Easter dinner right here at home.

What I Ate Wednesday


Happy What I Ate Wednesday! We are still suffering here in the Greater Toronto Area, with little to no sunshine and extremely cold weather. It's depressing, I admit, but I figure all you can do is treat yourself a little bit. Put the fireplace on, have a cup of tea, read a good book, listen to The Smiths (I like to wallow a bit in my misery) and eat some tasty food.

I definitely did that last bit yesterday. On What I Ate Wednesday, I generally show you my Tuesday day of eats, and I'm going to do that again today, even though it was a day of not particularly healthy eating. I started out well, with a banana-strawberry-orange juice smoothie for breakfast.

What I Ate Wednesday


I'm flying by the seat of my pants this week when it comes to meals. When we returned from a weekend away, I didn't have the energy (or the groceries) to put together my usual Sunday menu plan.

This vegan Tofurky roast and vegetables dinner, above, was on the last menu plan. We enjoyed it last Wednesday evening, having neglected to prepare it on time for Easter supper.

A Menu Planning Challenge, week two



Last week, I created my first weekly menu plan for the year. Before I get to this week's plan, I would like to do a bit of a review of how last week's meals turned out.

I based Monday's Vegan Sausage and Rapini Melt on a sausage on a bun recipe in Chatelaine magazine.
