What I Ate Wednesday - A Day of Vegan Eats



If you follow me on Instagram, you'll see some of the vegan party foods I have enjoyed recently, as well as meals from recent restaurant and bakery visits. Here on the blog today, I'm sharing a look at one particularly healthy and delicious day of vegan eating.

Angela Liddon's new cookbook, Oh She Glows Every Day: Quick and Simply Satisfying Plant-based Recipes, will be out soon. That news inspired me to browse my copy of her first cookbook, The Oh She Glows Cookbook: Over 100 Vegan Recipes to Glow from the Inside Out. I went grocery shopping with a few recipes from the book in mind. For breakfast, I prepared Angela's classic green monster smoothie. It's a simple recipe with yummy results. The smoothie's green colour comes from a handful of spinach or kale. With the spoonful of peanut butter and dash of cinnamon in the recipe you don't even taste the veggies though.

What I Ate Wednesday, a day of vegan eats

Thinking about going #vegan or even preparing more vegetarian meals? It doesn't have to be difficult. Check out a day of easy, #healthy vegan eats!

Happy Wednesday! For those of you thinking about going vegetarian or vegan or perhaps even enjoying "meatless Mondays," you might worry that vegetarian meals are laborious to prepare. And I'm not gonna lie - they definitely can be so. There is sometimes a lot of veggies to cut, tofu to press, lentils to cook and assorted things to sauté.

But we all have those nights when we don't want to spend two hours in the kitchen making dinner. I have days where I feel really energetic and motivated to try recipes and create something great. But not as often as I'd like. More frequently I just want to get something reasonably healthy on the table as fast as humanly possible. If you're the same way, then I hope my What I Ate Wednesday posts can provide you with some helpful suggestions for quick and healthy vegan options.

What I Ate Wednesday


Remarkably I had forgotten just how nutty spring can be around here. Tuesday saw hail, heavy rain, sunshine and wind, all within a few hours. My eating patterns (or lack thereof) have been much the same - anything from hot soup and warm muffins to smoothies. My Monday day of eats looked like this - started off with a chia seed banana berry smoothie for breakfast.

What I Ate Wednesday


It's a little bit summer, a smidgen fall and a whole lot I'm-scared-of-winter around here right now. Which means a mix of warm weather foods and comforting fall soups. Distinctly in the summer category - the fruity ice pops we made recently in the Zoku. I took my recipe for Strawberry Peach Green Tea Ice Pops and changed it up a bit. Instead of green tea, I used water (I was rushing). I also added half a banana into the mix, and included slices of strawberry and banana to perty it up a bit.

My little girl and I just returned from a four-day visit to my parents' house. My mom and I share a passion for food and eating out at restaurants. She is always happy to have companions for restaurant meals. We headed into the town of Dunnville not once, but twice to eat at The Minga, a vegetarian cafe. Here's my daughter enjoying a fresh-made lemonade.

What I Ate Wednesday


As I said in last week's What I Ate Wednesday post, I am trying to be on my best eating behaviour lately. I want to eliminate any painful IBS symptoms. While I am avoiding refined sugar as much as possible, I am certainly not cutting out maple syrup. For some reason I just can't get enough pancakes this week!

My son stayed home from school last Friday because he was developing a cough. So I whipped up some vegan blueberry pancakes from Chloe's Kitchen for the two of us. The ingredients are so simple and yet the recipe produces surprisingly delicious pancakes.

What I Ate Wednesday


The last couple of weeks have been very busy and eating on the run isn't always the healthiest kind of eating. Add to that a few rum and cokes and my irritable bowel is...well, irritated. So I've been trying to eat well this week - less sugars, less breads and more veggies. My overall plan is to ensure that everything I eat has nutritional value.

Prior to our trip to Niagara Falls this weekend, though, there wasn't much food in the house. As I complained this past Friday on Instagram, I had some trouble putting together breakfast and lunch. Come Friday, there's often no fresh fruit in the house and very few groceries in general. But breakfast was pretty good anyway. I topped some Nature's Path instant flax oatmeal with ground flaxseed, pecans, dried cranberries and almond milk.

This What I Ate Wednesday, I'm starting with a look back to Sunday. The husband and I went to the One of a Kind Show and then out to dinner at Sadie's Diner. It's so nice to be out and about now that the weather is above zero and the snow is melted! (Well, it has melted downtown anyway! There is lots of snow left on suburban lawns!)

The Oh She Glows Cookbook (review and recipe)

In the unlikely event that you haven't yet heard of The Oh She Glows Cookbook and its author, Angela Liddon, here is a bit of info for you. Angela is the creator of the very popular Oh She Glows blog, a recipe blog with an abundance of lovely vegan recipes. Angela switched to a whole foods, vegan diet five years ago and says she has since witnessed a powerful change in herself.

"After a decade of struggling with an eating disorder and subsisting on low-calorie, processed, 'diet' foods, I knew I needed to change my life—and my health—for the better," she writes in the introduction to the book. Angela shifted her focus to wholesome, plant-based foods and was amazed by how much her health and vitality improved. She started the Oh She Glows blog in 2008 and her honest and friendly approach, along with her incredible recipes, have since earned her legions of fans worldwide. Plus, she lives right here in the Greater Toronto Area!

What I Ate Wednesday


I have been reviewing a few cookbooks this week, which means lots of leftovers in the fridge. And in the cookie tin fortunately (unfortunately?). My husband has also done some cooking this week. He has agreed to cook on the weekends - which doesn't stop him from complaining while he does it - but whatever, as long as I get food.

We worked together on this Friday dinner, above. I made the lentils and rice (I'm embarrassed at how often this appears on the blog, but it's honestly so easy and tasty) and broccoli, while he made the breaded tofu.
