What I Ate Wednesday


I have been reviewing a few cookbooks this week, which means lots of leftovers in the fridge. And in the cookie tin fortunately (unfortunately?). My husband has also done some cooking this week. He has agreed to cook on the weekends - which doesn't stop him from complaining while he does it - but whatever, as long as I get food.

We worked together on this Friday dinner, above. I made the lentils and rice (I'm embarrassed at how often this appears on the blog, but it's honestly so easy and tasty) and broccoli, while he made the breaded tofu.



On Saturday, he made burritos with homemade refried beans, tofu and onion mix and mashed sweet potatoes. He served homemade French fries on the side. Yum.


Here's everything I ate yesterday. In the morning I had Nature's Path instant flax oatmeal with a tablespoon of ground flax, walnuts, dried cranberries, strawberries, blueberries and raspberries.


For lunch, I had leftover tomato soup with chickpea croutons from The Oh She Glows Cookbook.



I followed it up with a nut butter and chocolate chip cookie, also from The Oh She Glows Cookbook.


I have been developing a recipe for vegan spelt cinnamon rolls this week too, so I just had to sample one of those after lunch. I think I have perfected the recipe and I'll be sharing it soon!


For dinner, we had another Oh She Glows recipe, a delicious avocado and potato salad. Plus more breaded tofu.

I feel like spring may soon arrive and with it my desire to experiment more in the kitchen!

  3. My boyfriend is trying to loose weight, so he's asked that we eat very healthily for the next two weeks. So we've been having smoothies for breakfast, salad for lunch and soup with seed bread for dinner.

  5. Isn't the Oh She Glows cookbook fab? I made one of the stews and it great and oh my goodness those Peanut Butter Cookie Dough Balls are addicitve!
