I was off watching my son's school basketball tournament today, so I'm late with my What I Ate Wednesday post. Here's a quick look at some of the meals I enjoyed this week, starting with a tofu and veggie stir-fry on top of Chinese noodles.

The Weekend


We had a very full and happy weekend. In fact, I didn't get around to doing my meal planning post this week because we were so busy. On Friday evening, we left for a basketball tournament in Burlington, Ontario, which is just minutes away from our hometown of Hamilton, where my in-laws live.

We asked them to watch Jolene the dog while we stayed at the hotel with my son's teammates. Of course, Nonna fed us dinner when we dropped off the dog. That can't hurt, can it?

What is it about sushi? Seriously, do they put something addictive in those little rolls?

You're with me on this, right? Every time I have it, I just want it again. Like, when I look at these pictures, I want to order sushi. And it's 9:00 in the morning!

What I Ate Wednesday, carb crazy edition


I am a carb lover. The thought of a low-carbohydrate diet is simply ridiculous to me. Carbs make me full, comfortable and happy.

Sometimes, though, it would be nice if more of my carbs came in the form of vegetables. I used to visit a naturopathic doctor who told me she ate protein and a sweet potato for breakfast...every day. No bread, no cereal...no fun.

On Monday, I ate a quick breakfast of spelt bread with peanut butter and jam. I decided to jazz it up a bit by washing it down with a homemade soy milk latte.

What I Ate Wednesday, I love lasagna edition


For this, my third “What I Ate Wednesday,” I am once again sharing some food highlights from the past week.

I had an amazing lunch on Sunday when we visited my sister-in-law and her family for the day. My mother-in-law joined us, bringing along her special non-dairy tofu lasagna. We all marvel at how brilliantly tasty it is, without the usual lasagna ingredients.

She also breaded some Japanese eggplant. The picture just doesn’t do it justice. Delicious.

Thanksgiving with Nonna

Everyone should have an Italian mother-in-law. Seriously. Unless your own mom is Italian, of course. As a vegetarian, clearly Thanksgiving is not about turkey for me. Fortunately, my mother-in-law is a genius in the kitchen, and prepares everything from turkey (for other folks) to eggplant lasagna to homemade gnocchi to veggie balls and breaded tofu for Thanksgiving dinner. At other times of the year, she even prepares lasagna made with rice noodles and tofu to satisfy not only the vegetarians, but also those in the family who have sensitivities to wheat. She also dresses a salad like nobody else (lots of olive oil and salt) and makes tons of veggie side dishes (all of them tasty). My children have told me that I can’t cook like Nonna, and I tell them, “You know what, I’m okay with that. Not too many people can cook like Nonna.” I wish I had lots of photos to show you of Nonna’s food, but I was too busy eating it. I got one photo of her lovely fruit platter and one photo of leftovers we will be enjoying for lunch today. While I was writing just now, I heard my son exclaim, “Oh my gosh, the pasta, I can’t stand it. It’s too good.” I think I better go before it’s all gone!
