Old El Paso Restaurant Challenge #YouMexiCAN


As an Old El Paso Canada ambassador, I was recently presented with a challenge. My kind of challenge. Old El Paso sent me and my family off to a Mexican cantina to dine, with the expectation that I would later recreate my restaurant meal at home. Just so you know, I am always ready to go out for dinner!

Fajita Friday - with a giveaway (CLOSED) (#YouMexiCan)


I can't count the number of times our little family has shared Taco Tuesdays. And tacos have never once failed to be a hit with the kids. Given the success of Taco Tuesdays, we recently decided to expand our Mexican food options, adding Fajita Friday to our weekly menu plan.

Friday is the perfect day to kick back, relax and take a break from a busy week. Clearly you don't want something too challenging on the dinner menu. But you still want your meal to be nutritious and delicious. Fajita Fridays are just the thing - fun, easy and satisfying.

Easy Guacamole in Minutes (#YouMexiCan)



I've said it before - summer meals should be light and easy. Too often we get into a dinnertime rut around here. When we can't think what else to make, we inevitably go for pasta and tomato sauce. A classic standby, but it doesn't exactly scream summer. In fact, my son recently told me he can't stand pasta anymore. Let's not get crazy now kid - you're half Italian! There's always room for pasta.

For a more exciting summer meal that the kids always love, though, we go Mexican. I have often written about how much my kids enjoy Taco Tuesdays. The beauty of Taco Tuesdays is that you can put all sorts of foods out on the table and the whole family can dig in and take whatever they please.
