Easy 4-Ingredient Guacamole (Vegan, Gluten-Free)

Everybody needs a go-to recipe to make simple, creamy, dreamy guacamole. This is mine. This guacamole is fast and easy to make and it takes just four ingredients (not counting salt and pepper). My kids love it. They actually fought over this very bowl of delicious, healthy guacamole pictured. Perhaps I should have doubled the quantity? This recipe makes enough for two to four people to enjoy as a snack, but I definitely suggesting doubling it up to serve at a gathering (or for hungry teens just getting home from school!). The recipe is naturally plant-based, vegan and gluten-free.

Easy Guacamole in Minutes (#YouMexiCan)



I've said it before - summer meals should be light and easy. Too often we get into a dinnertime rut around here. When we can't think what else to make, we inevitably go for pasta and tomato sauce. A classic standby, but it doesn't exactly scream summer. In fact, my son recently told me he can't stand pasta anymore. Let's not get crazy now kid - you're half Italian! There's always room for pasta.

For a more exciting summer meal that the kids always love, though, we go Mexican. I have often written about how much my kids enjoy Taco Tuesdays. The beauty of Taco Tuesdays is that you can put all sorts of foods out on the table and the whole family can dig in and take whatever they please.

What I Ate Wednesday and a cookbook giveaway


Happy hump day! I hope your week is going wonderfully well. We are freezing here (-15°C) and poor Jolene the beagle mix hasn't been getting all her regular walks.

But we can stay inside and eat, right? I showed you some highlights from last week's eats when I shared my weekly meal plan on Sunday. 

Not on the meal plan was Saturday's lunch, which my husband put together. He made fresh guacamole and served it along with tortilla chips and cheese. The chips in the picture are mine, so they have vegan Daiya cheese on them. We also had cantaloupe.

This was not the best week for food around the homestead, I guess, because I didn’t snap a lot of photos! Either that, or we were just too busy chauffeuring the kids around to take pictures.
