Classic baked apples with tasty oatmeal crumble topping are so easy to make and are a perfect comforting dessert for fall and winter.

Baked apples are a classic comfort food dessert. Add a crumbly, slightly sweet, crispy oatmeal topping and you have a suitably delicious alternative to apple pie, without the oil-laden pie crust. These baked apples with oatmeal crumble topping make for a healthy, delicious dessert that couldn't be simpler to make. And the recipe calls for a short list of handy ingredients. The result is very much like an apple crisp, with a little less fuss involved.

Cut Apples in Half For Simplicity

For this baked apples recipe, I suggest cutting two apples in half (through the stem and end) rather than baking whole apples. I find that half an apple, along with oatmeal crumble topping and a nice scoop of vegan ice cream, makes the perfect serving size. Cutting the apples in half also makes it easier to remove the cores and stems. 

Once you cut the apples in half, place them in a baking dish with the skin side down/cut side up.


Prep The Easy Oatmeal Crumble Topping

This oatmeal crumble topping is a variation of the topping on this Anything Goes Fruit Crisp. It's gently sweet and a little buttery, for a touch of decadent dessert goodness. 

The topping is a simple mix of:

  • light spelt flour (all-purpose flour will work too)
  • hearty oats
  • coconut sugar
  • salt
  • maple syrup
  • light oil such as light olive oil or grapeseed oil

Simply stir the dry ingredients together in a bowl and then mix in the wet ingredients - no heating required.

At first glance, it may appear that you have too much oat topping for your apples, but that's not the case. Trust me, smoosh every bit of topping onto the apples! You'll be rewarded with a generous amount of oatmeal crumble with each bite of tasty baked apple. The pairing of smooth, sweet apple with crispy baked oats is a winning combination.

Bake Them Apples!


Cover the baking dish with foil and bake the apple halves in an oven heated to 375°F for 25 minutes. Remove the foil and bake for another 15 minutes, or until the apples are soft. 

Bonus, as these baked apples cook, they fill the kitchen with the comforting, cozy aroma of apples and baked oats!

Serve the baked apple halves with vegan ice cream or coconut whipped topping and a drizzle of maple syrup.


Baked Apple Variations

For a tasty cinnamon baked apple, sprinkle the apple halves with cinnamon or a cinnamon sugar mix before piling on the oatmeal crumble topping. You could also use a pumpkin pie spice blend. Feel free to sprinkle raisins or dried cranberries onto your apples too!

Easy Baked Apples With Oatmeal Crumble Topping (Vegan Recipe)


Ingredients
  • 2 Organic Washington Apples (I used Honeycrisp here)

    For the Crumble Topping:

    ½ cup light spelt flour

    ½ cup large flake oats

    ¼ cup coconut sugar

    ⅛ teaspoon salt

    2 ½ tablespoons light oil (such as light olive oil or grapeseed oil)

    2 tablespoons maple syrup


Instructions

Preheat the oven to 375°F.


Cut the apples in half through the stem and end. Using a spoon, scrape out the core and stem.


Place apple halves in an 8” x 8” baking dish, cut side up.


For the Crumble Topping:


In a medium bowl, stir together flour, oats, sugar and salt until well mixed. Add oil and maple syrup and stir.


Divide crumble topping among the 4 apple halves, pressing into the recessed centres slightly. 


Cover the dish with foil. Bake for 25 minutes. Remove the foil and bake for another 15 minutes, until the apples are soft. 


Serve with vegan ice cream or coconut whipped topping and a drizzle of maple syrup.
