What I Ate Wednesday (A Day of Vegan Eats)


As I was preparing the photos for this What I Ate Wednesday post, I realized that all my meals look pretty darn healthy. But this is just a look at highlights from the week, and I certainly don't photograph everything. Had I been photographing my food from Friday night through to Sunday, there would have been a few more (delicious) snack items, like a vegan chocolate caramel bar, organic jelly beans and a couple of vegan peanut butter cups.

The kids wanted to go out to some shops on Friday night, so we stopped at the health food store to load up on snacks while we were out. It's easier for me to find vegan snacks there, although the kids would have been happy to go to a convenience store or the like. All of this is just to say that I believe in balance. My strategy (if you want to call it that) is to have healthy main meals and enjoy a few treats in between now and then. Actually I prefer homemade treats best of all, but sometimes I don't get around to making them. One healthy snack we do love is hummus, above. I made some this week to enjoy on a fresh baguette with tomato slices. I use this hummus recipe from Oh She Glows.



I am continuing to enjoy oatmeal for breakfast each morning. I particularly like it when we have fresh berries in the house. But that's not always the case, because you have to go to the grocery store every two days to have a fresh supply. I have been to the store twice for berries this week and I think that might be it until the weekend. I always cook my oats with a bit of cinnamon and top them with maple syrup and soy milk. Other toppings vary. Above, I used blueberries, walnuts, banana slices and strawberries.


Another day I cooked diced apple with the oats, and topped my oatmeal with more diced apple, blueberries, strawberries, walnuts, hemp hearts and dried cranberries. It's a delicious breakfast that enables me to get a good two or three servings of fruit in right in the morning. This begins my look at a day of vegan eats - starting with the oatmeal above, this is what I ate yesterday.


I usually have a cup of decaf green tea with my oats and/or mid-morning.


For lunch, I made Loaded Vegan Nachos With Scrambled Tofu. I posted the recipe on the blog yesterday and had the leftover toppings for lunch. These loaded nachos are great for watching the big game or simply eating for lunch. I washed them down with kombucha.


In the late afternoon, we had to bring my car in for an estimate. I got in a fender bender on the weekend, when a guy cut me off in the roadway. It's been a pain, but I'm grateful it wasn't worse. Anyway, by the time we got home, I didn't feel like cooking and I really wasn't that hungry. But the family had to be fed, so I sauteed tofu cubes, onion and frozen veggies and added soy seasoning and leftover cooked rice. The others also had veggie burgers and salad.

My husband made us decaf soy lattes in the evening and I had a couple of Oreos with my coffee. I didn't take a picture for a couple of reasons - no natural light to be had and I was by that point tucked into my bed watching Netflix on my iPad.
