What I Ate Wednesday, Happy Halloween edition


I'm not going to lie to you. Halloween is here, and I'm going to be dipping into some treats.

Okay, truth be told, I have already had a few treats. I might have indulged in a couple of small packets of Swedish Berries...and a couple of chocolate bars.

I'm going to limit myself from eating too much candy though. How am I going to accomplish that? Why, by baking of course. If I have some homemade treats to consume, I won't be so tempted by the chemical-infused packaged goods.

Now for a What I Ate Wednesday look at what I ate on the weekend...besides candy of course.




My daughter and I had a girls day on Saturday, while the boys were out of town at a football game. We mostly hung around the house and got cozy, but we made one trip to Costco for supplies. I stocked up on fresh fruits (in very large containers) as well as frozen fruits and veggies (in very large bags). I`m still trying to keep my freezer nice and tidy, so I put smaller portions of the frozen produce in freezer bags, and sent the original bags to the bigger freezer in the basement.



I have two containers for veggies in my upstairs freezer and one for fruit. The system works well. Not only does it keep the freezer tidy, but my son can pull out the fruit easily when he makes a smoothie in the Magic Bullet. In theory, he can easily put it back too. But that doesn`t happen.



I used some of my newly purchased fresh fruit on top of my morning granola the next day.



My girl and I also had some fresh berries on top of our salad.



We didn`t waste much of our girl time cooking. Just the salad and some rice penne with sauce for dinner.



Normally I make my own sauce, but I had picked up this Pasta Romano tomato and basil sauce at Costco in the fridge section. It is surprisingly tasty and fresh...not at all like bottled sauce. My only complaint is that it`s kind of watery.



My husband returned on Sunday with a care package from my mother-in-law. She sent me some of her homemade pasta sauce with veggie and rice balls. She also sent along breaded and fried tofu. Yum.



That night, my husband made a simple veggie soup with rice noodles.

  4. Yum. I love frozen raspberries. They are seriously better than fresh!! Can't wait to see what treats you cook up with your Halloween candy stash... And that veggie soup sounds amazing.

  6. Joann, sounds like a cozy weekend indeed. I love brown rice pasta, if is do tender. You mother-in laws veggie rice balls sound delish, what's in them?

    1. I will ask my MIL what she put in this time. It varies. Lots of veggies usually. Sometimes parmesan cheese for the rest of my family.

  7. You shouldn't feel any guilt about dipping into a few halloween treats! That's what this holiday is about! I'm especially excited for a couple reese's pb cups. They're definitely my favorite, and I usually try to avoid them. Today is an exception!!

  10. I'll be eating some chocolate too... and then when I get really desperate I move onto the sugar-type candy. Can't control that sweet tooth! Happy Halloween :)

  11. Yum yum yum! You are giving me some great dinner ideas for this weekend... easy is key since hubby will be away for the next 5 days and none of my littles know how to cook for their mama quite yet- ha!

    I dread what will happen to my blood sugar over the next week or so. I just can't resist chocolate! I'd have to say that Twix are a favorite of mine!

  12. I love the Kit Kats, but this year I went further and also took Reese's Peanut Butter cups and Starburst. Where is my will power!? The kids actually took most of their candy to the local toy store to trade in for a 20% off coupon, and we gave them each $5 to spend.
