What I Ate Wednesday
The last couple of weeks have been very busy and eating on the run isn't always the healthiest kind of eating. Add to that a few rum and cokes and my irritable bowel is...well, irritated. So I've been trying to eat well this week - less sugars, less breads and more veggies. My overall plan is to ensure that everything I eat has nutritional value.
Prior to our trip to Niagara Falls this weekend, though, there wasn't much food in the house. As I complained this past Friday on Instagram, I had some trouble putting together breakfast and lunch. Come Friday, there's often no fresh fruit in the house and very few groceries in general. But breakfast was pretty good anyway. I topped some Nature's Path instant flax oatmeal with ground flaxseed, pecans, dried cranberries and almond milk.

Top 5 Vegan Recipes of 2013
I took a look-see at my blog stats to determine what were the most visited vegan recipes in 2013. Some of the top 5 recipes were posted before 2013, but they continued to remain popular over the past year. All of them are simple, healthy and delicious. Okay, chocolate dipped peanut butter balls aren't that healthy, but they beat store-bought treats!
Here, starting with the most popular recipe, are my Top 5 Vegan Recipes of 2013:

Menu Planning & Vegetable Soup With Lentils
I am trying my best to keep up my weekly meal planning. This is week four. Read on for this week's menu plan.
Last week started with Monday's Vegetable Soup with Lentils. This is a old favourite that my husband and I began making many years ago. The recipe follows. What I really like about this soup is that it's simple - you throw in the ingredients and let it cook for an hour. That gives you time to make a salad, slice up your bread, pour a glass of wine and relax.

What I Ate Wednesday, I love lasagna edition
For this, my third “What I Ate Wednesday,” I am once again sharing some food highlights from the past week.
I had an amazing lunch on Sunday when we visited my sister-in-law and her family for the day. My mother-in-law joined us, bringing along her special non-dairy tofu lasagna. We all marvel at how brilliantly tasty it is, without the usual lasagna ingredients.
She also breaded some Japanese eggplant. The picture just doesn’t do it justice. Delicious.
