What I Ate Wednesday

I'm keeping it short and sweet this What I Ate Wednesday. I had planned to share a look at everything I ate on Monday, but we ended up going shopping for my son's school project in the evening. Which meant grabbing a veggie burger, fries and a pop at Harvey's. And then a stomach ache for the rest of the night (from the bubbly pop). And no photo. Just quick and greedy consumption of the aforementioned take-out meal!

But I did get a photo of my breakfast, above. My husband made a quick spelt bread in the breadmaker the night before. I had the very last slice that was left of it the next morning, topped with peanut butter and jam. I also had a couple of slices of the Banana Ginger Medjool Date Mini Loaves that I made on the weekend. The recipe is for an upcoming post. You will want to get this recipe. Not to brag, but these ordinary-looking little slices are incredibly delicious and moist.

Menu Plan, 9/52

Before I go over this week's meal plan, I want to share highlights from last week's meals. The plan went well...meaning I stuck to it even when it was challenging.

Which brings me to Monday. The plan called for minestrone soup in the slow cooker. When I was planning my menu, I forgot that Monday was the "Family Day" holiday. We had to be at my son's first soccer game by 8 a.m. (Who plans games for 8 a.m. on a holiday, by the way?) Nevertheless I stuck to the plan and quickly threw everything into the slow cooker before we headed out. No easy feat, because it takes us 20 minutes just to get the kids out the front door.

Menu Plan, 8/52

If it weren't for my menu plan, posted here for all to see, I don't think I would have made a darn thing this past week. I was slow, sluggish and irritable for most of the week, and I'm not even sure why. I just kept telling myself, "One day you'll wake up magically feeling better." It's always worked before.

I also started popping more Vitamin D, because that very well could be part of the problem. Time for spring now...please. In the meantime, I am chugging back warm beverages like decaf coffee and green tea. I'm also listening to soothing music. Right now I have the "Fireplace Folk" channel running on Songza. Simon and Garfunkel is playing at the moment. As I said in this post, they always remind me of thrift shopping with my friend back in high school.

Insta-Friday in real life

Once again, I am posting a Friday look at our week in cell phone photos.

The weather has been completely erratic and mostly miserable, and I know us “northern” types are starting to feel the pain. Some sun once in a while would be lovely.

Hang in there friends. Spring is around the corner…sort of.

In the meantime, enjoy some simple pleasures, like great friends, good books, a warm fire, maybe some nice wine and some delicious food (of course).

All my life I have lived within about an hour’s drive of the CN Tower in Toronto. But, I never actually visited the thing. Last Sunday, teachers and their families got in free—a perfect way to save yourself about $100. See that first pic? Time to get my car cleaned.

At 553.33 m (1,815 ft, 5 inches), it is the world’s tallest tower. I had some trouble standing on the glass floor, I’ll tell you. It’s darn windy and cold on that outdoor observation level—ten degrees colder than ground level, my son reported.

In terms of food this week, I have been cleansing. I had this great smoothie while I was shopping at the local health food store—veggies and fruit and dates…yum. I made a favourite veggie and rice soup, using a recipe from Robin Robertson’s One-Dish Vegetarian Meals. I added some beans for protein. My daughter made a special “cupcake” of her own creation the other day—applesauce, cut up apples and red sprinkles. She said that if I put it on my blog I would be sure to win the Top 25 Vegan & Vegetarian Mom Blogs contest…so vote for me and make my little girl happy. J

This was the view from my back door on Sunday—unfortunately, the next day it rained and melted the rink. At least they had the good sense to take the nets home. Today? Freezing rain. You never know what you're going to get around here.

Insta-Friday in real life

Once again, I am celebrating this week’s simple pleasures. This sweet little poem kind of sums things up, I think.

“It takes a heap o’ livin’ in a house t’ make it home,
A heap o’ sun an’ shadder, an’ ye sometimes have t’ roam
Afore ye really ’preciate the things ye lef’ behind,
An’ hunger fer ’em somehow, with ’em allus on yer mind.
It don’t make any differunce how rich ye get t’ be,
How much yer chairs an’ tables cost, how great yer luxury;
It ain’t home t’ ye, though it be the palace of a king,
Until somehow yer soul is sort o’ wrapped round everything.”
—Edgar A. Guest

We decided to treat ourselves to a platter of veg sushi last weekend. I whipped up some miso and tofu soup to go with it. Shockingly quick and easy, with a recipe from Robin Robertson’s Vegan Planet.

A week doesn’t go by without some sweets around here. I made some peanut butter chocolate chip cupcakes, some banana chocolate chip muffins and some more of my favourite—date squares.

My sister gave us a popcorn maker for Christmas. I love the vintage look of it, and it makes Friday’s after-school snack super quick and inexpensive. I also made an old favourite for dinner one night—“Hearty Winter Potato Soup” from How it all Vegan. It isn’t the prettiest, and the kids thought it would be gross, but my son ended up enjoying it.

My daughter came home from school feeling really tired yesterday. She didn’t even want her snack—not a good sign. She fell asleep right away (unheard of for this little ball of energy). She started out alone on the couch and then Jolene decided to keep watch over her. The dog isn't even allowed on the couch, but I couldn't bring myself to move her. With the resilience of youth, my daughter’s already starting to feel better today.

Have a great weekend everybody!

Insta-Friday in real life

My husband just got a new cell phone. It takes pictures.
Seems normal to you, I’m sure. Not to us. Our previous two cell phones were about eight years old, and on pay-as-you-go plans. I’m not a big fan of talking on the phone. I’d much rather talk over a cup of tea.

Inspired by Lindsey, however, I have used the new cell phone to do a bit of a photographic week in review.

Here’s what I managed to capture…some everyday inspirations.

My husband made a delicious curry yesterday, from Robin Robertson’s Vegan Planet.

Everyone got a little something sweet in their Christmas stockings…and I don’t mean the clementine in the toe. Here’s the kids’ candy stash.

The grown-ups have a candy stash too. We haven’t used much because we are too busy eating Christmas cookies.

I made another banana bread today. With eight kids in and out of the house, it didn’t last long. My niece liked it. She said banana bread usually makes her gag. She had a second piece.

My daughter had the rare opportunity to play games with three of her female cousins today. So cute.

My husband took five kids skating. Brave man.

I made some pasta while they were gone skating, along with Nonna’s peas and mushrooms.

For dessert, I made some “classic chocolate chip cookies” from How it All Vegan. I used chocolate chunks for a change.  Yes, I made dessert, even with a bunch of Christmas cookies still in the freezer and a candy stash in the pantry. I can’t be stopped.

I am not generally a snow lover, but it does make the front path look pretty.

The trees are wearing fur coats.

Our family room looks so cozy with the Christmas tree. If only we could actually sit down. You’ll see that there’s a book on the table. It almost looks like people read here…but the kids won’t allow that. My husband tried today (while I just knowingly smiled), until the banging in the basement got too loud to ignore.

Have a great New Year’s Eve!
