November is National Peanut Butter Lovers Month. As if we need another reason to eat peanut butter! Peanut butter is not only creamy and delicious, it's also a great vegan source of protein. And it makes the perfect partner to chocolate. Together, chocolate and peanut butter are the foundation of many rich, decadent and delectable treats. These no-bake Peanut Butter Chocolate Crunch Bars are one tasty, dessert-worthy example.

Although peanut butter is high in calories, you don't need a lot of it to get a good amount of protein. It's all about moderation. And these Peanut Butter Chocolate Crunch Bars have the decadent feel of a store-bought treat with healthier, all-natural ingredients, including optional added chia seeds.

Peanut Butter Chocolate Crunch Bars (Vegan, Gluten Free)

These chocolate bars are super fast to make, and everything comes together in one pot. Just heat the chocolate chips, peanut butter, brown rice syrup and coconut oil in a small pot over medium heat, and then stir in the vanilla, shredded coconut, salt and chia seeds. The mixture is quite thick and creamy.

Then, stir in the two cereals - a crispy rice cereal and a flaked corn cereal - and press the mixture firmly into a square baking dish lined with parchment paper. These chocolate bars can be a delicious gluten-free dessert or snack as long as you source the ingredients carefully to ensure the brands are free of gluten.

Once these squares have been refrigerated for a couple of hours, you can get to cutting...and eating! The only downside to these Peanut Butter Chocolate Crunch Bars is that they are very addictive. I ate more than a few myself, and the whole pan was empty by the next day. I have two teenagers, who fortunately keep me from eating the whole pan of chocolate bars myself. My daughter (and unofficial taste tester) tells me these bars are a good mix of sweet and salty. She noted that they satisfy a sweet tooth, have a pleasant crunch and offer a healthier alternative to a chocolate-dipped granola bar or a store-bought chocolate bar.

Peanut Butter Chocolate Crunch Bars (Vegan, Gluten Free)

Ingredients (16-20 bars)
  • 1 cup (non-dairy) semi-sweet chocolate chips
  • 1 cup natural (salt and sugar free) peanut butter
  • 1/2 cup brown rice syrup
  • 2 tablespoons coconut oil
  • 1 tsp vanilla
  • 1/4 cup unsweetened shredded coconut
  • 1 tablespoon chia seeds (optional)
  • 1/4 tsp salt
  • 2 cups gluten-free crispy rice cereal
  • 1 cup gluten-free flaked corn cereal
Instructions

Line an 8-inch by 8-inch baking dish with parchment paper.

In a small pot, heat chocolate chips, peanut butter, brown rice syrup and coconut oil over medium heat. As mixture warms and chocolate chips melt, stir together until smooth and creamy. The mixture will be thick.

Remove from heat and stir in vanilla. Mix in coconut, chia seeds, salt and both cereals. Stir together well.

Turn mixture out into prepared pan and flatten down with the back of a spoon or your hands until top is smooth.

Cover lightly and put into fridge until bars set (about 2 hours).

Cut and enjoy!
