What I Ate Wednesday


Happy Wednesday! This is a very busy week in our house, with soccer games, dance rehearsal, dance recital and a planned outing to a play. It seems like springtime is meant for making up for all we didn't do in winter. Something - maybe all the activities or our crazy changeable rainy weather - has left me with a bit of a migraine today. So I'll make this brief.

I'm starting What I Ate Wednesday with a pic of one of my breakfasts this week - Nature's Path buckwheat wildberry waffles topped with maple syrup - fruit on the side. Quick, easy, tasty and healthy. Head over to this post if you'd like to win some yummy Nature's Path products.



Now for my weekly look at a full day of eating. On Monday, we had lots of fresh fruit in the house, so I started the day...excuse me while I go let the dogs in - they are barking at the neighbours again...okay, all is quiet again. (I did have to bribe them in with baby carrots.) Anyway, I started the day with a plate of that aforementioned fresh fruit...excuse me while I go chase Jolene out of the laundry room - she is chewing on the bits of towel in Ace's crate (that he previously chewed). Okay...


For lunch I had leftover lentils and rice. If you visit regularly you know I make this all.the.time. Except this time my husband made it and he did a great job. I also had leftover breaded fried tofu.


Dinner is sort of embarrassing to show you. My daughter had rehearsal for her dance recital, so I threw together a "dinner" for us to share (on the windowsill backstage as it turns out). I didn't even remember to take the photo while the food was still uneaten. So, anyway, we had hummus and salsa and crackers and tortilla chips and fresh fruit. Not my ideal dinner, but it kept us going.


I also ate a SimplyWellness FODMAP bar out of my purse in the theatre. Wellness Foods sent me these bars and some Soothe (psyllium) bars to try out. They are great snacks for people with IBS or other digestive issues. The FODMAP bar has a pleasant coconut almond flavour. It held me over until I got home...and then this happened...


I had an evening snack of So Delicious dairy-free cashew frozen dessert in salted caramel cluster flavour. To be honest, I prefer caramel in chocolate bars, but this ice cream has a very nice flavour nevertheless and the chocolate-covered cashews are outstanding.

  3. I love that you're keeping it real with your dinner. It looks delish. :) I have dinners like that too. Keeping yourself fueled is important!
