What I Ate Wednesday, with all you can eat sushi


It's Wednesday and it feels like the start of summer around here. After a few cold days, we are back into a couple of steaming hot days. If only we could go to the beach! But the kids are in school and there is work to be done.

We are starting to get a little bit into fall cooking. I made a vegetable soup the other night. I love the ease of preparing soup. For another dinner, my husband made roasted vegetables and rice, which we enjoyed with Gardein Mandarin Orange Crispy (fake) Chick'n, pictured above.


The next day I had leftover roasted veggies and rice for lunch, along with a Gardein veggie burger.


I guess I can't get enough roasted veggies, because I turned them into a third meal, heating them up in olive oil and adding frozen mixed veggies and Yves veggie sausage.


I stirred in rice and seasoned with Bragg's Liquid Aminos. Easy and tasty.


Another night's dinner was a meatless cutlet baked in tomato sauce with a Daiya faux cheddar cheese slice on top. Served over spaghetti and with a side of salad, it makes a simple and delicious meal.


That brings me to my Tuesday meals. I almost forgot to photograph my breakfast. Hence the half-eaten Kinnikinnick gluten-free bagel. I bought a bunch of these at the Toronto Vegetarian Food Festival on the weekend. They were giving samples and I found these bagels don't have any nasty, gluten-free aftertaste.


My sister came to visit me on Tuesday. She had called the night before to say that her husband was going to play golf in our area and he'd be dropping her off for the day. She asked me if I wanted to go for all-you-can-eat sushi for lunch. Um, yes.

We gorged on vegetarian spring rolls, edamame, veggie fried rice, sweet potato maki sushi, veggie green dragon rolls and more. So much more. I bet some of you will see the picture and have to go for sushi for lunch. It's that addictive, isn't it?


Sometimes I don't even eat dinner after an all-you-can-eat sushi lunch. But I did this time. I had a veggie burger and salad before taking my little gal off to her first hip hop class.

I see we relied on a lot of packaged products this week. I figure it's only natural for the first week back to school. We were getting used to waking up early, packing school lunches and evening activities.

  2. Oh, that sushi looks divine!! I've been making roasted veggies a lot lately, trying to tempt Fall into arriving... it's not working.

  5. i love roasted veggies too - i used to eat them pretty much everyday!! I try to limit myself a bit now as I think it was causing me stomach troubles the amount of veg I was getting through haah!
    All of your food looks delicious!
