Banana Muffins With Vegan Mayo


Nasoya sent me a couple of bottles of their vegan sandwich spreads recently. I tried the new NayoWhipped on my veggie burger and found it added a nice, tangy taste. Overall, though, we tend to use vegan mayonnaise more in the summer months, when I like to make potato salad for gatherings.

In the meantime, Nasoya pointed me to the recipes on their website for ideas as to how to use my new sandwich spreads. I am a big fan of muffins, so I was immediately drawn to the recipe for vegan banana muffins. I already have a favourite banana muffin recipe, but I thought perhaps I should be a bit adventurous and try another recipe.



You can find Nasoya's recipe here. I modified it some, using light spelt flour to replace the whole wheat and all purpose flour mix. I also used the NayoWhipped instead of the original version, just because that was the jar I had opened. I added half a cup of Enjoy Life allergen-free chocolate chips, because my kids love chocolate chips. Let's face it, so do I! Oh, and I blended the sandwich spread, bananas, sugar and vanilla in the blender, because I'm lazy like that.

I found the batter was thicker than what I'm used to, but also airy at the same time.


I confess I was skeptical about what kind of flavour the tangy Nayonaise would contribute to a sweet recipe like this one, but the muffins turned out to be quite tasty. My daughter actually said they were better than my usual banana muffins.

Nayonaise is an egg-free, dairy-free alternative to traditional mayonnaise. It has now been reformulated with a smoothier, creamier texture and a better flavour. NayoWhipped, the line's newest variety, has a tangier taste for those who prefer a sweeter sandwich spread. Both spreads are vegan, fortified with Omega 3 ALA for added nutrition and offer a good source of vitamin B12. They are non-GMO as well. You can read more about these products here.



I made this recipe again yesterday, using mini-muffin trays. We had some friends over, including two children. Together with my kids, they ate every last muffin. That's an endorsement if I ever saw one.

  2. These look pretty delicious. My favorite muffin is blueberry, but I am quite sure I could consume a banana and chocolate chip like this.

    1. I know a couple people who don't like the texture of mayo, but sometimes that's an egg aversion. I love a good muffin...little portable meals. :)
