What I Ate Wednesday...with chocolate peanut butter treats


On Monday, I shared my vegan menu plan for this week. I also showed you photos of some of the dinners I made for last week's plan. 

Not wanting to repeat myself this What I Ate Wednesday, I am going to show you some food items that weren't on the plan. Yesterday, I was in the mood for chocolate. The same goes for the day before...and the day before that...

I made my favourite no-bake, chocolate-topped nut butter cereal bars. This time I was out of brown rice syrup so I used agave nectar instead. I added peanuts to the mix just because I had some in the fridge. The problem with these things is that I eat about three of them in one sitting. I'm about to do it again when I finish this very post.


My daughter complains that I put peanut butter in everything. I say, "What's the problem?" The other night I made these peanut butter chocolate chip cupcakes. As if the recipe wasn't already sweet enough, I added a little something more to make them sweeter. That's why the middle of each cupcake kind of caved in.



Yes, jam in the centre. The chocolate chips I sprinkled on top kind of fell into the middle with the jam...and boy was it good.


It wasn't all about chocolate and peanut butter this week. Me and the kiddies are still successfully increasing our consumption of fruits and veggies. I started one day with a fruit and coconut milk smoothie. Here's the recipe, super quick: 1/2 cup coconut milk, 1/2 cup orange juice, 1 Tbsp ground flax, 1/2 frozen banana, 5 strawberries and a handful of blueberries.


Here's another one of those fruit platters I've been setting out for the kids after school. I actually got to share some of this one before they ate it all.


Meals I didn't show you on Monday. First, vegetarian chili. It was on my meal plan, but I ended up asking my husband to make it because I was busy that evening. He wasn't all that agreeable...oh well...suck it up.


Sunday was his official cooking day and he made pasta with Yves faux meatballs. He makes a tasty tomato sauce. He is Italian after all. This picture shows the leftovers I had for lunch the next day with a delicious Blue Sky creamy root beer. Yummy sugar.

  7. The choco-pb bars look super good, that combo is always a fave of mine! However, my quick fix is usually a mouthful of PB with nutella lol
