What I Ate Wednesday, carb crazy edition


I am a carb lover. The thought of a low-carbohydrate diet is simply ridiculous to me. Carbs make me full, comfortable and happy.

Sometimes, though, it would be nice if more of my carbs came in the form of vegetables. I used to visit a naturopathic doctor who told me she ate protein and a sweet potato for breakfast...every day. No bread, no cereal...no fun.

On Monday, I ate a quick breakfast of spelt bread with peanut butter and jam. I decided to jazz it up a bit by washing it down with a homemade soy milk latte.



I wanted to try this So Nice Barista Blend, which claims to be "specially blended for the art of coffee." I really can't tell you if it's better than regular soy milk, but it was quite tasty and sweet. No need for sugar.


Here's a look at my Tuesday meals.

After the kids left for school, I was craving pancakes. I made myself some vegan pancakes with raspberries and sliced strawberries in them, and then made a bunch of pancakes with blueberries in them for the kids to have as a snack after school. We served them with Earth Balance spread and agave nectar.


For lunch, I had pasta with pasta. What can I say? My mother-in-law is in town, and she brought her special tofu lasagna, along with delicious homemade tomato sauce with eggplant chunks in it.


For dinner, I made rice noodles with a stir-fry of baby corn, cashews, celery and orange pepper. The sauce was made from soy sauce and chili garlic sauce. I burned one side of the cashews and my husband sliced away the burned halves. It all turned out okay in the end though. We also had some sweet potato fries on the side, dipped into a bit of Vegenaise (vegan mayonnaise). Yum.

  2. Just last night my husband made saffron rice with sweet peppers, mushrooms & asparagus that was super tasty {*she types in between bites of cinnamon roll*}-- & my Italian Grandma would have totally smiled on the pasta with pasta~*

    1. Oh gosh, that rice dish your husband made sounds so good! And a cinnamon roll would be nice too. Your Italian grandma probably would have had some rapini or salad with the pasta too. I was too lazy :)

  8. I am all about carbs, too! It would be tough to be a vegan and cut out carbs... it was interesting interacting with paleo-minded folks at the conference this past weekend. I respect where they're coming from, but also know it's not for me. Vegan pancakes sound delish!

  9. i LOVE that you love carbs, because i am a total carb girl. and i agree. i like them. they satisfy me. and if i try to "not eat as many" i just want them more. what's wrong in honoring our bodies and cravings? nothing i say!

    i haven't had tofu lasagna in forever! (fiance stopped being vegetarian, so large vegetarian meals are not often made ) and your look DELISH.

  10. Those chinese noodles look so tasty! My favorite meals have been the ones my mom has been making while my parents visit :) Why does food always taste better when someone else makes it?

    1. Yes, I believe she usually had chicken. I would have had to replace it with tofu. I just can't do that prep for breakfast, I'm afraid.
