What I Ate Wednesday, sushi edition

Happy hump day! This What I Ate Wednesday, I am looking back at a few food highlights from the past week. Sushi, when I can get it, is always a highlight. I stopped and picked some up for lunch one day. That's bean curd and mushroom sushi on the left, avocado and cucumber maki on the right. What's with the salad, though? Where did the tradition of iceberg lettuce with weird dressing come from?

On Sunday, my husband made sushi. This time, he added some beets for interest. This is my Monday lunch leftovers. I had made some potato and leek soup too.

I have been mainly having boring breakfasts of spelt bread with peanut butter and jam lately. My breakfast reading materials change daily though. On this particular day, I was looking at Food Styling for Photographers. I got it out of the library. Looks like a good book, but it's all about preparing food that you are NOT going to eat -- applying finishes, etc. I cannot be bothered. I want to eat my food! I also got out a recipe so that I would remember to make it after breakfast.

That day, it was All or Nothing Granola Bars.

For a change, or actually to use up stuff in my kitchen, I mixed regular peanut butter with chocolate peanut butter and regular crispy cereal with chocolate crispies. I threw in a bit of trail mix that nobody was eating.

For yesterday's lunch, I had a Sol Cuisine vegan mushroom rice burger. I generally don't eat much regular wheat. I stick to spelt, rice and kamut. But I had bought my husband these lovely buns and I couldn't resist one. I smothered it in mayo, ketchup and mustard and added pickle slices. It was delicious.

What are you eating today?

  1. I haven't had sushi in a while, but I just love the sticky rice, and all of the vegetables in the vegetarian versions! Yours look awesome.

I'm hoping to eat some butternut squash, grilled chicken, and steamed zucchini today. Crossing my fingers that my dining hall comes through :)
