Menu Plan, 22/52


After a few weeks of playing it by ear, I am back to menu planning for this week. We tend to eat healthier, better meals when I plan ahead.

I am also back to emphasizing fruit consumption for me and my family. For several weeks I was greeting the kids almost every day with an after-school snack of fruit on a tray or fruit salad. They enjoyed it and I felt good about them getting more fruit. So, I'm back at it again. Here's a fruit salad I presented them with after school one day this week, above. I cut up a pear, an orange, a peach, a banana and strawberries and then threw in some raspberries. My favourite part is the fresh berries. The kids love them too, but I'm finding I have to stop by a store every two or three days to buy more.

Pumpkin Banana Date Loaf


It's definitely fall now. I can't pretend to be in the last lingering days of summer anymore. 

So, let's embrace this new season...with cozy sweaters, a nice blaze in the fireplace, a forest walk among changing leaves...and something pumpkin-based to eat.

Consider starting with this yummy loaf. It features the comforting taste of pumpkin, along with the additional flavours of banana and sweet dates.

The perfect Mother's Day gift


I had a very peaceful Mother’s Day, a good portion of which I spent on my bed.
My family brought me a lovely breakfast featuring my new favourite pancakes—maple and apple cinnamon pancakes from the Skinny Bitch Ultimate Everyday Cookbook.
I piled up a stack of magazines and books on my bed, and spent some post-breakfast time reading. I also dozed off a bit. I really can’t help it. I would rather read, but the sleep just comes.
It was a beautiful, sunny day and I could hear the sounds of geese and frogs in the pond behind our house.
My children brought me sweet, handcrafted cards and even a sculpture made out of pencils.
They also gifted me with a wonderful comfort box.
For a long time now, I have been wanting to outfit a comfort drawer, filled with some of my favourite items and special treats. Comfort drawers are to be used on those dismal days that we all experience, when, for unexplained reasons, we just feel down and gloomy.


Turns out, my family included several of my favourite self-nurturing items in their Mother’s Day gift, which they presented in a charming little suitcase.

So, I figured, why not a comfort box rather than a comfort drawer? It has the added advantage of being portable, which might just come in handy if you would rather sit and mope in front of the fireplace than in your bed.

My husband and the kids went shopping together, and picked out a magazine, some books, a movie, sweet potato chips, body lotion, chocolate and some Swedish Berries.  I am quite impressed by their choices…these are many of my favourite small comforts.


I have a bit of an owl obsession, so they were all pleased when they found this owl mug.
I would only add to my comfort box some tea bags and a lovely scented candle.
Apparently my family even picked out a candle, but misplaced it somewhere before they got to the cash.

I would have to say that, for me, this was the perfect Mother's Day gift, filled with simple pleasures to brighten my day.
I bet this would make a great Father's Day gift as well, with some carefully chosen items.

Let me count the ways

Putting the crass commercialism of Valentine’s Day aside for a moment, it really is a lot of fun.
Look at it purely as an opportunity to celebrate the special people in your life—partners, parents, children and friends. You don’t even need to spend any money. Just make a card, or better yet, a cake.

How about a breakfast in bed? Or, for the busy parent, a coupon to be redeemed later for some precious alone time?

It was in this spirit of celebration that my sister-in-law and I held an after-school Valentine’s party for our kids this past Friday. The kids were so excited to spend some time with their cousins, doing some simple crafts and decorating cupcakes.


I tried out a vegan strawberry cupcake recipe from Skinny Bitch: Ultimate Everyday Cookbook. They turned out to be quite delicious, and reminded my sister-in-law of a recipe her (Italian) mom used to make, because they have a little bit of almond extract in them.

The “secret” ingredient combination is silken tofu blended with real strawberries.


The recipe says it makes 12 cupcakes, but I was able to make the 12 and still have enough batter left for this small heart-shaped cake. It was a good thing, too, because the cupcakes didn’t turn out to be enough to satisfy seven of us.

Here’s my son with his cupcake. He’s often a lone boy in a sea of girls, I’m afraid. Luckily, daddy came home after work to join him.



We did simple, dollar store crafts—nothing too taxing for the moms to come up with. Here’s my daughter with her door hanger craft.

Cooking Skinny Bitch Style


I bought another cookbook. What can I say…it’s an addiction. This one has been well worth the expense, though. I bought it a few weeks ago and I have already made several of the recipes, some of them more than once.

It’s called Skinny Bitch: Ultimate Everyday Cookbook, by Kim Barnouin. I also have a copy of Skinny Bitch In the Kitch, which I picked up at a library book sale, but I never warmed to it. Something about all of the intentional swearing and the use of fake meats turned me off. But, I have so enjoyed this newer book that I might just give the other a second chance.
First, I want to say I don’t think there is anything particularly “skinny” about the recipes. But they are healthy, and they use mainly whole foods that are already on my shopping list. (I don’t know if almond milk is on your shopping list, buy hey, give it a try if it isn’t! ) I hate nothing more than a long list of hard-to-find (and expensive ) ingredients.

I did do some planning after I bought this book, though. I picked out a number of recipes from it and then shopped for the whole week.  Having a clear plan sure makes it easier when it’s time to cook.
Barnouin’s Banana and Cinnamon Muffins offer a new and delicious twist on the vegan banana muffin, with a crunchy topping that makes them look nice for company. Next time I’m going to make sure there is some company around when I make them, because they are best eaten the first day. The Coconut Banana French Toast was sweet and tasty, and my son said it tasted like “deep fried banana tempura.” He also liked the Coconut- and Almond-Crusted Tofu, which he called a “treat.” I have also made the Pumpkin Pecan Banana Bread (pictured at top). It was so yummy, I made it again (minus the pecans, so the kids could take some to school).

I am looking forward to trying the Spaghetti with Spinach in a White Wine Garlic Sauce and the Strawberry Cupcakes. If only someone could make them for me…
