Delicious Berry Oat Jam Bars (Vegan) Recipe

Now that we've seen the first (and the second) snowfall of the year, my thoughts inevitably turn to baking. How many warm scones, muffins and cookies will it take to get me through the long, snowy, cold Canadian winter? Quite a few, my friends. Quite a few.

Berries are one of my favourite foods to enjoy in summer, when they are fresh, abundantly available, affordable and sometimes even local or pick your own. That being said, I'm not prepared to leave berries behind in winter. That's when frozen berries come in handy. If you are on the hunt for easy blueberry recipes or blueberry desserts, these delicious berry oat bars might be your jam (pun intended). They are also perfect for the strawberry enthusiast and the raspberry lover. Really you can use any combination of fresh or frozen berries you desire or have available. Infusing your recipes with berries offers not only great taste, but the added bonus of healthy antioxidants.

I posted this oatmeal bar recipe many years back but I thought I'd update it a bit, re-photograph it and share it again because it's so simple to make and it's such a favourite dessert recipe of mine. My family loves these berry oat jam bars too. When I originally posted the recipe, I called them berry oat bars...because they contain berries and oats, haha. But I think they are more accurately described as jam bars from what I've seen of similar recipes since then - they have jam in the centre rather than being completely oats-based.

The filling for these buttery (without the butter) bars is a luscious mix of blueberries, raspberries and strawberry jam. These cut berry oat jam bars (above) all came from the same batch but you can see that different berries are more dominant in different ones. If you prefer one berry to another you can certainly make these with only one type.

For example, for blueberry oatmeal bars, simple fill with fresh or frozen blueberries and blueberry jam. The mix of raspberries, blueberries and strawberry jam that I've included below in the recipe happens to be my favourite combination though.

Aside from the berries, these jam bars have a few simple ingredients: jam (duh), oats (large flake or quick), flour (light spelt works great, as does all-purpose white flour), vegan (dairy-free) margarine and sugar. They are vegan, so they are of course free of dairy and eggs.

These berry oat jam bars are super easy to make. Simply combine oats, flour, sugar and melted margarine. Reserve a cup of this mixture for the topping and press the remaining mixture into a baking dish. Bake the base for 15 minutes. Meanwhile, for the berry jam filling, stir together fresh or frozen blueberries and raspberries with the strawberry jam and a teaspoon of flour.

When the oatmeal base is baked, spread the fruit filling over it, top with remaining oatmeal mixture and bake for about 20 more minutes. Cool, cut and serve!

These delicious vegan berry oat bars make a great snack or dessert. I've even had them for breakfast (that whole getting through winter thing!).

    Ingredients
    • ¾ cup vegan margarine
    • 1 ½ cups large flake rolled oats
    • 1 ¼ cups light spelt flour or regular all-purpose flour
    • ½ cup organic sugar
    • ½ cup blueberries, fresh or frozen
    • ½ cup raspberries, fresh or frozen
    • ½ cup strawberry jam
    • 1 tsp light spelt flour or regular all-purpose flour
    Instructions

    Preheat oven to 350°F. Oil an 8-inch square pan or line with parchment paper.

    In a small pot on the stove or in a dish in a microwave, melt the margarine and set aside.

    In a medium bowl, stir together the oats, flour, sugar and melted margarine. Set aside one cup of this mixture. Press the rest of the mixture into the prepared pan. Bake for 15 minutes.

    In a medium bowl, stir together the fruit, jam and 1 tsp of flour. Spread over the baked crust and sprinkle reserved oat mixture on top. Bake for an additional 20 to 25 minutes until golden.

    Cool completely and cut into bars.
