Vegan Yogurt Breakfast Bowl With Chia Berry Jam

This vegan yogurt breakfast bowl with chia berry jam is my solution for an easy, fast and healthy breakfast. You can enjoy it at home, or layer it in a mason jar or other lidded container to eat on the run. Tart coconut yogurt pairs nicely with the slightly sweet fast and easy chia berry jam recipe I recently posted. Add a delicious bounty of whole food and superfood toppings and a bit of granola and you have a filling, nourishing breakfast.

My yogurt breakfast bowl calls for store-bought yogurt, so it's hardly complex as "recipes" go. But one of my goals with this blog is to share inspirational ideas for easy vegan meals, because a vegan lifestyle (or even just enjoying a few meatless days a week) doesn't have to be difficult. Sometimes when we're in a rut or just looking for new ideas, it's helpful to see what others are eating.

I suggest stirring a small amount of maple syrup into unsweetened coconut yogurt so you control the sweetness yourself. You could also use other varieties of non dairy yogurt such as soy, almond or cashew-based vegan yogurt.It may take a bit of sampling to find the best vegan yogurt out there. Some are more thick and creamy, others more thin and runny.

It comes down to personal preference, and sometimes price. I tend to go for whichever vegan substitute for yogurt is on sale when I'm grocery shopping. My current choice is unsweetened Yoso Creamy Cultured Coconut. The ingredients used to make this Canadian dairy free yogurt include organic coconut, non-GMO corn starch, non dairy lactic acid and non dairy bacterial culture, namely Lactobacillus acidophilus - one of the most common probiotics.

It may also take some time to find the best granola or cereal that goes well with yogurt. I have used Manitoba Harvest Organic Dark Chocolate Hemp Yeah! Granola in these photos. It has a bit of a "hempy" taste but it works well when paired with sweet toppings such as blueberries and strawberries. I also topped the vegan yogurt breakfast bowl with goji berries, chia seeds, slivered almonds, dried cranberries and a few dairy free semi-sweet chocolate chips. And that chia jam, of course. This combination gives me a variety of foods, so I get fibre, calcium, protein and antioxidants in my breakfast yogurt bowl. It also tastes very much like a special treat, while still being a healthy breakfast option.

What else can you add to yogurt for breakfast? Banana slices work well. Fresh raspberries, walnuts, dried mango or apricot, coconut, cashews, sunflower seeds. It's a good opportunity to see what you have in your fridge actually.

Ingredients (1 serving)
For the Toppings:


  • goji berries, chocolate chips, dried cranberries, chia seeds, blueberries, strawberries, slivered almonds


Instructions

Add coconut yogurt to a bowl. Stir in maple syrup. Swirl in chia berry jam.

Top with granola and other toppings as desired. Enjoy!
