What I Ate Wednesday (A Day of Vegan Eats)


Spring is here in earnest now, with some warm days, some rainy days and lots of worms making their appearances on the driveway. Perhaps that wasn't a good transition into noodles? What I meant to say is it's a transitional time with regard to food. You have those cool and rainy days when a bowl of soup is much appreciated. And those warmer days when you just want to throw a veggie burger on the grill. For just about every darn day, noodle and rice bowls work. Change up the toppings and sauces depending on your cravings and what you have in the fridge and pantry. Above, we had udon noodles with peanut sauce, sauteed mushrooms, broccoli, carrots, tofu and sesame seeds.



With this noodle bowl, above, we had broccoli, tofu cubes, peanut sauce and sesame seeds again, but this time with mango slices and avocado. Yum.


Speaking of tofu cubes, I added this simple recipe for Marinated Tofu Cubes With Roasted Veggies to the blog yesterday. A great meal for a cooler day in spring, when you don't mind having the oven on.


One day I had a super easy lunch of Gardein faux orange chick'n and leftover soup that my mother-in-law had sent us home with.


On days that call for a little extra comfort food, I like to use up my spotty bananas and bake up this Best Banana Bread Ever.


My full day of vegan eats started with this muesli morning round topped with peanut butter. I washed it down with decaf green tea.



Lunch was leftover Quick & Easy Chana Masala from The Oh She Glows Cookbook: Over 100 Vegan Recipes to Glow from the Inside Out. I also had steamed cauliflower with olive oil, balsamic vinegar and salt. This chana masala is indeed quick and easy and quite tasty too.


My daughter requested Easy Vegan Chickpea Patties for dinner. Which is funny, because I was thinking about them just before she got home from school, while I was re-indexing my recipes page. She also asked for green beans dressed with balsamic vinegar. And I did some smashed potatoes with garlic powder and vegan gravy. We also had a green salad, which I neglected to photograph. I didn't photograph the chunks of dark chocolate I downed in the evening while watching Acceptable Risk either.

  1. I'm always looking for more tofu recipes. Chana Masala is another yummy thing I've been meaning to try again. I cook whatever appeals to me no matter the season. Wonderful roundup of your meal! :)
