What I Ate Wednesday


I'm long overdue for a What I Ate Wednesday post! I have eaten plenty of satisfying meals lately, but I haven't often been inclined to photograph them. Must be those January doldrums. Is anybody else feeling blah? I neglected to take Vitamin D throughout the winter and that's a mistake in a climate like this where sunshine is rare. (Read this primer on Vitamin D for more.) I have been trying to make up for it by taking Vitamin D regularly this week, as well as using my happy lamp for 10 to 20 minutes a day.

In any case, I thought I'd share a few of the meals that I have actually gotten my butt in gear to photograph recently. Starting with this breakfast of champions, above. Raisin scones. Sometimes when you don't feel much like eating first thing in the morning, you just have to treat yourself. You can find the recipe for these vegan Scottish Scones here.



Lunch was leftover kale (sauteed with garlic and olive oil), quinoa with a simple vegan gravy, roasted chickpeas and a tiny bit of the vegetables from our Chinese food dinner the night before. (It's the only part of the meal that was left. The kids aren't so big on the vegetables as they are the rice and noodles.)


When all else fails, spaghetti with homemade tomato sauce makes a quick and tasty dinner. We also had Yves vegan "meatballs."


Other things we have been eating around here lately - our favourite vegan banana muffins (another breakfast for those who don't feel like eating breakfast, aka me). This time I slathered on some sunflower butter.


My daughter made these mini vegan chocolate cakes with "buttercream" icing. I love, love, love that she enjoys baking!

    1. Thank you Susie! I could go for a scone right now actually...do you think scones are okay for dinner as well as breakfast? ;) She is so cute about the icing. She has asked for more baking/icing tools for any upcoming occasions that call for gifts - like maybe Valentine's Day. :)
