What I Ate Wednesday (in a post-election haze)


How many of you stayed up late to watch U.S. election results? I finally went to bed about 12:20, hoping I'd wake up in the morning to find the results were only a bad dream. I'm going to go out on a limb here and say I didn't want Trump to win. Seeing as I'm Canadian, I don't think that comes as a surprise.

As this article shows, 80 per cent of Canadians polled said a Trump victory would be bad for our country. Not that Hillary is our top pick - 34 per cent felt she'd be bad for Canada. But, if we're talking the lesser of two evils here, come on people. You know who is our top pick? First Lady Michelle Obama! I don't even know if she wants the job, but how awesome is she? Sixty-one per cent of Canadians want her to run for president. The fact that she would be the first female president, as well as being African American, is kind of just a bonus, considering she is intelligent, caring, ethical and well-informed. (I don't think you could apply any of those adjectives to Trump.) Too bad we don't have a say.



Moving on with the daily business of enjoying our lives as best we can, let's talk food. I'm looking at a day of my vegan eats, starting with the somewhat uninspired tea and toast at the top of the page. Sometimes a hot cup of green tea and toast with peanut butter and jam is just what the morning calls for. Easy, tasty and reliable.

For lunch, I had leftover spaghetti with my husband's homemade sauce and tofu "meatballs." These tofu balls have a bit of creamy peanut butter in them and I find them so delicious. The night before, we served them to two of my kids' (non-vegetarian) friends and they seemed to like them.


Mid-afternoon I was feeling snacky and I munched on the few Snapea Crisps that were left in the bag. My whole family loves these things!


For dinner, my husband and I worked as a team to put together simple whole foods elements to make up a delicious vegan dinner in a bowl. I put quinoa in the rice cooker (so easy to do and frees up your stove). He put vegan chick'n and sweet potatoes in the oven and made a simple vegan gravy. We fried mushrooms on the stove too.

This is actually a photo of my next-day lunch leftovers (because it was so dark for picturing taking by the time dinner was ready). The next day I also made this easy and delicious hummus from Oh She Glows and added fresh avocado slices to my vegan bowl. And let's not forget the roasted beets. We are making an effort to roast beets more regularly (or some times just shred them uncooked into salad) because we really enjoy them and they are a great, energizing natural food for fall and winter. The kids ate basically all of their Halloween candy in just over a week. To avoid temptation, I regularly ate a few squares of this dairy-free dark chocolate with fruit and nuts that I picked up at Walmart. It's my little evening treat that I eat while watching old episodes of Alias.

  1. even over here we're in shock about the election result. Strange times ahead. My friends and I used to love Alias, we used to allocate points to various things like "Jack Bristow gives someone a filthy look". I think we all got a bit bored in the second last season and it dwindled, I didn't end up watching the last season much!

    1. Well, it's a choice that can affect us all I think. I have heard that Australians and Canadians are very alike too. I love your Alias ideas. I wish I had somebody to earn points with. I'm in the third season. Next season will be the boring one I guess!

  3. Yes, so many of us distraught and in shock. I tearfully went to bed after realizing what was inevitable. Now the voters have to live with him, sadly.
