What I Ate Wednesday


It's actually not a great time for me to be writing about food. Why? It's mid-morning and I haven't eaten. I'm hungry, but I've had a fair bit of pain, burning and bubbling in my stomach (actual stomach, not colon) over the last week. I've had temporary relief from apple cider vinegar, digestive tea and even over-the-counter medicine, but today I'm playing it safe, giving my digestive system a bit of a rest for the morning.

Looking at the picture above, I feel that I could eat pancakes though. You can always eat pancakes right? I enjoyed these pancakes and vegan sausage a few days ago. The pancakes were made with brown rice protein, using a recipe in Protein Ninja: Power through Your Day with 100 Hearty Plant-Based Recipes that Pack a Protein Punch.



Another day, when I was still shoving loads of pasta and other carbs into my face, I made this easy and tasty weeknight meal of "soccer mom" Faux Chicken Penne With Tomatoes.


Now to what I ate yesterday (when I was still throwing caution to the wind). I started the day with instant flax oatmeal, topped with granola, raisins, bananas, strawberries and chia seeds.


Lunch was this leftover deliciousness - tofu loaf, mashed potatoes, vegan gravy, sweet potatoes and cranberry sauce. (Looks like we're ready for Thanksgiving, huh?)


My tummy pain appeared before dinner, and I didn't feel much like cooking. I set up a salad bar for the fam, with all kinds of items so we could each choose what we like.


I, of course, chose every item, starting with a base of romaine lettuce and spinach. I added sauteed mushrooms, chickpeas, cucumber slices, grape tomatoes, strawberries, grated carrots, sunflower seeds and walnuts. I topped it all with white wine vinegar, olive oil and salt. I had watermelon for dessert.

In the evening, I also snacked on Nature's Path Organic Flax Plus Pumpkin Raisin Crunch Cereal with soy milk.

Here's hoping my tummy is happier today. I have had issues with irritable bowel syndrome (IBS) in the past and now I fear that my advanced age is slowing down my digestion further, haha.

  1. I had pretty bad IBS in the past and found that dairy made me feel sick, so once I gave it up I was much improved, same with my skin. Except now something else is really affecting me so I'll be visiting a vegan dietitian soon and ask for one of those short term elimination diet plans (though World Vegan Day is on in late October and I had planned to eat everything there!) Hope you feel better!

    1. I had the same experience - when I stopped eating dairy my IBS improved greatly. I'm sorry you are going through the same thing. The elimination diet plan sounds like a good idea! Maybe you can take a break from it for World Vegan Day? ;) Thanks. Jo
