What I Ate Wednesday


My green smoothie habit was going strong there for a while. I started each day with a green smoothie for a few weeks in a row. Only over the last couple of days have I not felt like drinking my usual smoothie. Partly I think I'm just tired of doing dishes. With four people home, it can feel like the dishes never end. And that blender is a pain to clean!

Anyway, whatever the reason, I'm afraid yesterday (the subject of this What I Ate Wednesday day of eats post) saw me starting the day with iced tea and a couple of peanut butter protein cookies. Not the healthiest breakfast, I know. But did I mention they were protein cookies? That makes it all good, right?

My daughter and I have been making iced tea regularly in the small iced tea maker I bought at Teavana. I had asked my family to get me one for my birthday, but the iced tea makers were all sold out when they went. On a later visit (mainly I sample teas in the store's doorway) I spotted this smaller version on sale. There are similar ones (like the Takeya Flash Chill® Iced Tea Maker) available online. I like that you brew the tea right in the pitcher and then remove the tea basket and pop the pitcher in the fridge.

I have been committed to taking my Vitamin B12 of late. I tend to end up with depleted levels if I don't take supplements regularly. A deficiency in B12 can have serious consequences, so, if you haven't had your levels checked, try to do so soon. Even if you eat meat, you may be missing intrinsic factor, the glycoprotein that enables the body to absorb B12. Currently I'm using Genestra Brands B12, because that's what the lady at the health food store directed me to.


We had a quick, simple lunch of quesadillas with black beans and Daiya pepper jack vegan cheese shreds. Plus a hash brown. Kind of random, but my daughter likes them. And watermelon.


Dinner was quick and simple too. We baked Gardein vegan cutlets, put them on spaghetti and topped them with tomato sauce. Sometimes we bake the cutlets with the sauce and vegan cheese on top.


Then it was on to a quick romaine salad with carrots and an olive oil vinaigrette.

You can be sure I ate more of those cookies in the evening too. We also tried to make slurpees with my son's slurpee-maker toy, but we've never used it before and we discovered that the plastic container that holds the soda is actually broken so the cola leaked all over the counter. That was a bust.

  1. My friends and I checked our B12 levels this summer. Mine were fine, but my friends have some deficiency. They are ok, but it was good to check and know in time that they have to correct the deficiency and that all of us have to be more serious about taking supplements. We are all vegan. After taking chewable B12 our energy level improved so much!

    1. That`s great that you saw immediate results from taking the B12 supplements. I go through phases where I remember to take them and then I tend to forget for a while.
