What I Ate Wednesday


Happy Canada Day to my Canadian peeps! I hope you have a fun-filled day with friends and family and lots o' good food! We are just over a week into summer and it has been a whirlwind of activity already. We must take advantage of warm weather when we can! And there will be rainy days on which to relax (from the looks of it so far, quite a few rainy days!). Hence the soup.

This What I Ate Wednesday, I'm starting with a photo of the minestrone soup I made recently on a chilly, rainy day. There wasn't much in the house in terms of groceries, but you can always whip together some sort of soup, right? I used small spelt pasta shells, yellow peppers, carrots and spinach. Plus I had slices of fresh baguette spread with hummus on the side.



It's cherry season and I love me some cherries.


My boy had a sleepover with friends on Sunday night in celebration of his 13th birthday. I made this platter of cherries, pineapple cubes and sliced strawberries for the boys' breakfast (and for the rest of us too).


And so began my Monday day of eats. Breakfast was the aforementioned fruit, along with vegan pancakes and packaged hash browns.


We ate breakfast kind of late, so I had a quick peanut butter and jam sandwich for lunch while the kids had leftover pizza from the party.


We went strawberry picking in the afternoon, so I munched on a few fresh, chemical-free strawberries straight from the field while we picked.


We also tossed some of the fresh-picked Ontario strawberries on our dinner salad.


After a busy day, we once again settled on quick veggie burgers for dinner. In an attempt to use up produce from the fridge, hubby topped the burgers with sauteed mushrooms. We also had roasted asparagus, steamed broccoli and some good ole French fries!

I downed a vegan ice cream sandwich later on too. Not surprisingly I forgot to stop and photograph it! I think I need to take up running...
