What I Ate Wednesday


This What I Ate Wednesday I'm going straight to a look at a full day of eats. It happens to be my Tuesday menu. I feel like it looks like I'm on a diet. I usually eat more food than I ate yesterday. In reality I just didn't feel like making anything special.

I started the day with a smoothie made from banana, cherries, pineapple, strawberries, chia seeds, water, orange juice and Natural Calm.



With no leftovers in the fridge, I decided to make a big salad for lunch. I had picked up a mix of Italian greens the day before. I topped a handful of those greens with cucumber slices, carrots, strawberries, sunflower seeds, walnuts, dried fruits, nectarine slices, beets and roasted chickpeas. I dressed it with olive oil, balsamic vinegar and salt.

It was very tasty and all the little bits and pieces forced me to slow down my pace of eating (which can normally be a bit too quick). This time the roasted chickpeas were from a bag. They were good, but I like the homemade ones better because they are gentler on the teeth!


I'm not really a salad-for-lunch person. I am far too hungry for that. So, I soon found myself hungry again. I had a couple of quinoa chocolate chip cookies and a cup of decaf green tea.


I made one of my quick favourites for dinner - the Lentil-a-Roni from Isa Does It: Amazingly Easy, Wildly Delicious Vegan Recipes for Every Day of the Week. I should say that I followed the pasta up with another salad, but, let's be honest, I didn't. What I really wanted after that was chocolate, but we didn't have any in the house. So I mixed some chocolate chips into my current favourite nighttime snack - strawberry, cherry and banana "ice cream" - made from pure and delicious fruit processed through my Yonanas Frozen Healthy Dessert Maker.
