What I Ate Wednesday


We were out of town all weekend for a basketball tournament slash visit with my sister. So, Monday arrived without a fresh infusion of groceries or any plan for what we could eat. On this particular What I Ate Wednesday, my food choices will tend to show that there was little in the fridge.

But first, before we left for the weekend I made this red lentil, potato and tofu curry. It was the first time I attempted this recipe and I really enjoyed it. I will make it again for sure.



I tried a new variety of Yves veggie burger last week as well. It's the first time I noticed it in the grocery store anyway. It's a lentil and quinoa patty and I quite liked it. We had giant buns in the freezer but I don't like a lot of bun with my burger so I used naan bread.


My Monday day of skimpy eats began with a breakfast created by my husband - wraps stuffed with tempeh "bacon," Daiya vegan cheese shreds and hash browns. To be honest I didn't really like the taste. Not a keeper.


For lunch, I decided to saute mushrooms and put them in a wrap with rice. Trouble is, I left the package of wraps on the counter, went outside briefly and came in to find Jolene the beagle mix destroying the whole package. Sigh. So I roasted broccoli, Brussels sprouts and mushrooms and served them with tortilla chips with vegan cheese shreds baked on top.


At dinnertime, my husband was away and my niece was visiting. So I bought pizza and potato wedges for the kids. I didn't feel like cooking for myself, so I ate potato wedges and reheated roasted veggies from lunch.


You would think I would have gone grocery shopping on Monday, but no. I'm tired of grocery shopping. So I had pita chips and hummus with celery and carrots for lunch on Tuesday.


I made a use-up-what-we-have soup for Tuesday's dinner - made up of carrots, celery, rotini and chickpeas that I had previously frozen. I cooked the soup in time for my daughter to take to dance classes but I didn't eat any myself at that time. After dropping her off at class, instead of heading home to eat, I went to the Target store closing sale and browsed the aisles for close to two hours. By the time I got home the pasta had overtaken the broth.

  1. Definitely slim pickings here today though the family will eat out tonight! I can't handle Daiya if it isn't melted!

    1. I figure there is always pasta or maybe lentils and rice (I say maybe because I might not even have rice left!) The Daiya was meant to be melted in both those dishes, but didn't quite make to melting point in the wrap!! :)

    1. You go girl! I need to get some food to actually organize! ;) And somebody spilled soy sauce down the back of the (inside of the) fridge, so I need to get working on that. :(

  3. haha Jolene! - I was unwrapping a ready made pizza crust for supper - As I was throwing the wrapper away with one hand our dog Tyrone was taking a bite out of the pizza crust that was in the other hand. Some family members have no manners...

  4. I'm a fan of those Yves burgers too. I wish my kids liked veggie burgers, the baby is actually more agreeable to them than W.
