What I Ate Wednesday


Happy What I Ate Wednesday! This past week has been a good one in terms of meals in this house. (Unfortunately that's not always the case.) One highlight was this long-weekend breakfast that I made on Sunday. It consisted of a tofu omelette filled with sautéed baby bella mushrooms, roasted asparagus and Daiya vegan mozzarella shreds. We also had vegan sausage and hash brown potatoes (from a bag - that tofu omelette took long enough to make!).



We keep coming back to the recipe for tofu stroganoff in Isa Does It. It calls for using soaked cashews to make a creamy sauce. It also calls for white wine, but I have substituted red a couple of times with great success too.


I made my favourite lentils and rice one day too. It's easy to make and the kids love it. I bought huge quantities of broccoli and asparagus this week at Costco, so I served up roasted asparagus and steamed broccoli on the side. This is a plate of next-day leftovers that I had for lunch.


When it came to Valentine's Day dinner, we all immediately agreed on one thing - takeout sushi and all the sides! It was super yummy and I love not having to cook.


In the absence of leftovers I made this simple sandwich for lunch one day - Daiya vegan mozzarella shreds, vegan ham and tomatoes on a tortilla, heated in the Panini press. Not the most exciting of lunches but it serves its purpose.
