What I Ate Wednesday


Is anyone else stunned that it's October? Where did September go? It was such a busy month I barely had time to notice its passing. But the weather was often lovely and we celebrated a couple of significant family birthdays. So I'm grateful for that.

Despite the fact that it's What I Ate Wednesday, I'm starting off with a photo of a drink. Because it was just sooo good. My husband gave me this Stirrings Simple Mojito mixer a while back. While cooking dinner on Friday, I decided it was time to finally give it a try. Especially since the fresh mint on our back deck was on its last legs. Anyway, it was a fabulous drink. Maybe too fabulous.



Now for some random meals from throughout the past week. On one beautifully warm fall day, my husband made a chickpea salad with beets. We served it on naan bread with hummus and had sweet potato fries on the side.


On another lovely fall day, we went for a family stroll and decided to pick up veg sushi on our way home.


One night I made this curried lentil, butternut squash and apple stew from Chloe's Kitchen. It is a simple recipe and makes for a healthy, satisfying dinner. It's supposed to have spinach in it, but we didn't have any, so what the heck, I made it without.


I received my much-anticipated copy of Chloe's Vegan Italian Kitchen: 150 Pizzas, Pastas, Pestos, Risottos, & Lots of Creamy Italian Classics this week. I included the complete title there, because man doesn't that sound good? We didn't have much in the way of groceries when I got the book, so I could pretty much only make the simple penne puttanesca. As you can see, I didn't even have penne, so I had to use rigatoni. It was a nice, quick meal but I'm looking forward to shopping with the book in mind and making more complex recipes.


On Sunday, the morning after my little girl's birthday party, my husband made vegan blueberry pancakes for the birthday girl, her cousin and a friend. There were pancakes left on Monday, so I popped them in the toaster for my breakfast and had sliced strawberries on the side.


Monday night's meal looks like a jumbled mess, but there were some yummy things in there. I roasted potato wedges and Brussels sprouts with rosemary while my husband barbecued mushrooms, veggie burgers and veggie hot dogs. We also had a cucumber and tomato salad with olive oil vinaigrette. There won't be many more barbecue-appropriate evenings this year, so we had to take advantage.

  2. Your photos are gorgeous!! I'm kind of sad Sept is gone because it's one of my favorite months, but it's just now feeling like fall so I can't complain!
