What I Ate Wednesday, with a beach day


The end of summer is threatening. Not only is it mid-August, but we have also had a few cooler days and a few rainy days. This past week, I was determined to get in at least one beach day. The weather on Friday was promising, so we headed to Centennial Park in Barrie, Ontario with my visiting in-laws and my sister-in-law and her husband and kids. As you can see, we sure know how to make ourselves at home on the beach. It's all hands on deck when it comes to carrying coolers, chairs and umbrellas to and from the car!



When it comes to packing food for a day at the beach, the kids are happy as long as you bring chips. Here they are happily munching on a bag of chips, above. (My daughter is into doing "rapper arms" now every time I take a picture for some reason.)


By the time we got our stuff to the beach, I didn't feel much like taking pictures of the food. I snapped this one shot of the fruit salad I prepared with strawberries, kiwifruit, blueberries and peaches. I also made mini banana muffins and vegan potato salad. We brought along fresh buns, tomatoes, hummus and vegan ham as well.


I didn't take many food photos at all this week, so I'm moving on to my Tuesday meals now. I started the day with Jordans Morning Crisp cereal with chocolate curls. It's so delicious that I have to make my daughter promise not to eat it all for snacks.


For lunch, I had a vegan ham and Daiya cheese sandwich cooked in the panini press. Plus a side of cucumber and tomato salad.


For dinner, my husband prepared tacos with sauteed vegetables and tofu cubes. He also made a delicious Mexican rice.


In the evening, I munched on a few dark chocolate almonds that I picked up at Trader Joe's in Buffalo on the way back from our New York City road trip. They are coated in salt and sugar, so they are salty and - you guessed it - sweet.

  1. We actually tried to go to the beach last week and it was closed due to contamination :-( We may have to drive a little further to get a clean one next weekend as my son is now beach crazy! I love those umbrellas!

    1. Oh boy, don't you hate that? It's a little scary. :( I hope you find a suitable beach soon. :) I MUST have umbrellas as my skin is either white or red! ;)

  2. We are heading to PEI tomorrow, the weather looks great after all the rain is out of the system - I intend to be on the beach every day I can, with chips!!

  3. Those almonds have me drooling! Both my youngest kids went through the rapper arm thing...I'm guessing its a millennial right of passage?

  4. Looks like you had a great beach day! We strolled around the beach in Port Dover a few week-ends ago but it was crazy busy. As far as snacks went it is all about the ice cream. Wish I could get motivated like you, your snacks always look so great and healthy!

    1. I have been meaning to make it to Port Dover this summer. When you cut dairy out of your diet, if makes it more difficult to find snacks on the road. But the plus side to that is you end up packing your own healthier snacks. :) Thanks Pia.
