What I Ate Wednesday


Okay, enough bitching. I'm not even going to mention that it's snowing...again. And freezing. But let's not talk about it. Spring is on the way!

And it's What I Ate Wednesday, so that's always fun. We have had some tasty meals this week, like the spaghetti and tofu balls that my husband made. Those tofu balls are incredibly delicious. The secret is a little bit of peanut butter mixed in. And I always persuade my husband to make the homemade sauce by telling him that his sauce is better than mine. "You're Italian," I say. "I can't compete with that."



We also had noodles of another kind one night - Chinese noodles with stir-fried veggies and tofu. We had yummy mashed sweet potatoes on the side.


One night the boys were out skiing. After I dropped my daughter off at dance class I decided to treat myself to a delicious bean burrito from Mucho Burrito. I ordered mine with two types of beans, veggies, brown rice and guacamole (no cheese). I washed it down with Blue Sky natural cola. It's so rare that I get to buy a meal just for myself. I enjoyed this one in peace and quiet.


Now for a look at Monday's meals. Breakfast was Nature's Path flax plus instant oatmeal. I mixed in a tablespoon of ground flax and a few raisins, then topped it off with blueberries and sliced strawberries.


I had leftover three bean stew with spelt dumplings for lunch. This is an old favourite that my husband likes to make. My favourite part is the fluffy dumplings. Yum!


I had watermelon with the kiddies after school.


I have also been snacking on Terra exotic vegetable chips this week. Sometimes I forget to eat between lunch and dinner. Then, by the time dinner is ready, I'm shaky and irritable. A handful of these will hold me over.


Dinner was minestrone soup that I had put in the slow cooker in the morning. I added Eden's kamut and quinoa twisted pair pasta before serving.

  1. everything you show looks so good! I wish my family ate 'meatballs' with their pasta, I'd make so many different vegan versions. They don't eat soups or stews either, arghhhh!

    1. Thank you! My kids will eat the tofu balls, luckily. The daughter won't really eat soup though. She just basically drinks the broth. ;)
