What I Ate Wednesday - with a picnic


Happy Wednesday! Dare I say it? Only two weeks until Christmas. My preparations are not as far along as I'd like, but that's not unusual for me this time of year. It all comes together in the end.

I have not been experimenting too much with new cooking lately. Making cookies is much more tempting! Last week was Christmas Cookie Week on the blog so I was focused on baking yummy vegan (and sometimes gluten-free) sweets. Poor me! I did try one new dinner though. I bought some fish batter mix and followed the package directions, only using sliced extra-firm tofu! It was greasy and kind of fun and pretty tasty. I served it with broccoli and squash soup made from those packages of cut-up squash and onions that you can find at the grocery store.



My kids have been sniffling, sneezing and generally just fighting cold viruses for the last couple weeks. My husband is complaining of a sore throat, noting that many of his students have been out of school with strep throat recently. Whenever any of us has even a slightly sore throat, we immediately consume some oil of oregano. My unscientific evaluation is that it seems to kill the nasty germs and often our sore throats don't progress any further.

My friends at The Healthy Shopper recently sent me a bottle of North American Herb & Spice's OregaRESP multiple spice extract capsules. These veg caps contain a blend of desiccated pure spice oils of wild oregano, wild sage, cumin and cinnamon. The spices grow wild in the mountains of the Mediterranean and are free of chemicals, pesticides and herbicides. One capsule is equivalent to 50 drops of oregano oil and the cumin, sage and cinnamon provide potent antioxidants. This is definitely going in our winter family toolkit!


I apologize for sharing another boring look at my breakfast of toast with peanut butter and jam. But I'm showing what I ate all day yesterday and I'm afraid that's what I started the day with...again.


Lunch was much better. I had leftover lentils and rice, one of my favourite easy, delicious meals. I also cooked up my favourite side veg - broccoli steamed with minced garlic, olive oil and salt. I had a salad as well - mixed greens with dried cranberries, fresh sliced strawberries and olive oil vinaigrette.


We have been selecting a new "25 Days of Christmas" card each day. The cards outline activities to share with your children in the days leading up to Christmas. Yesterday, my daughter picked out the card for having a picnic under the Christmas tree. The kids really enjoyed eating on the floor in the family room. We put out a blanket and my daughter brought up a thrifted picnic basket from the basement. She filled it with napkins, cutlery, ginger ale and plastic plates. The kids ate nachos and cheese and quesadillas with refried beans.


I had naan bread warmed and topped with hummus, along with a Happy Planet Thai coconut soup I picked up at Costco.

I also indulged in a few Christmas sweets while watching the movie Flight with my husband later in the evening. If I was nervous about flying before, now I'm downright scared!
