What I Ate Wednesday


Happy What I Ate Wednesday! I am sharing a look at food highlights from the week, starting with this past Friday. The kids were home for a PA Day. We have a fairly new tradition of enjoying PA Day brunches. We had lots of fruit, pancakes and veggie sausage.



On Friday night we ordered Chinese food. Now that my son is 11, we are starting to find that our usual order is not enough. This time we got two orders of vegetable fried rice and two orders of vegetable lo mein, along with an order of tofu in garlic sauce.


We had a very busy weekend - my son played in a couple of basketball games, the whole family visited the foot doctor and we hung out with my husband's cousins for dinner on Saturday night. On Sunday, my husband made a noodle and vegetable soup with chickpeas.


Now a look at my Tuesday meals. I started the day with Stonemill multigrain sourdough bread, toasted and topped with peanut butter and jam. I also had a decaf coffee with coconut creamer.


After that I popped a vegan banana chocolate chip loaf into the oven. I had a slice (or two!) of that for a mid-morning snack.


We had leftover soup but no leftover pasta noodles. We did have a tiny bit of the Chinese vegetable lo mein left though, so I threw that in the soup. It was quite tasty. (Usually I only keep leftovers for three days maximum, but I made an exception of one day in that case.)


For dinner, I boiled potatoes and topped them with olive oil, salt and garlic powder. We also had Gardein veggie burgers and salad. I wanted to make something quick before my daughter headed to hip hop class. I went shopping for holiday toys while she was at class. My question to retailers - why put things in your flyer and then not order enough stock for people to actually buy them? I managed to find two things out of my list of about 10.
