What I Ate Wednesday


Happy Wednesday. Let's talk about healthy food...and Halloween. I'm not one of those super disciplined people who can avoid consuming the Halloween treats. My strategy at Halloween (and pretty much every other day) is to eat healthy meals to balance out my chocolate indulgences.

Besides, I actually love healthy meals, especially when someone else prepares them! For example, my husband made me this broccoli pizza on Sunday.



He also made a delicious pasta, cannellini bean and vegetable soup.


On Monday evening, my son wanted spring rolls. Not the healthiest thing on the dinner menu, but that's okay. We also had kamut udon noodles with a stir-fry of veggies and tofu in teriyaki sauce.


My Tuesday meals began with my latest favourite breakfast option. I probably should be having more protein at breakfast, but I just don't feel like eating much in the morning. So, I've been having Pita Break muesli morning rounds (toasted) with margarine and a cinnamon/sugar mixture on top.


For Tuesday's lunch, I had leftover noodles with a mixed greens salad topped with pecans, dried cranberries, strawberries and an olive oil vinaigrette.


My husband had a craving for tofu loaf last night. Lucky for me, because he made dinner again. He served the loaf with roasted potatoes and acorn squash topped with pecans. We ran out of margarine (from me and the kids eating that margarine/cinnamon/sugar topping so frequently) so he put coconut oil in the centre of the squash (with brown sugar). It took some getting used to but I kind of liked it.

  6. I'm hungry now :) We don't really celebrate Halloween in South Africa, but I want to eat chocolate every day. We only make cake etc. over weekends, but I eat some dark chocolate during the week. I don't worry about it because we eat pretty healthily most of the time.

  9. It was a good week over there! We've been doing lots of simple stir fries, pretty healthy... and then I've also already eaten half the Halloween candy! I have to go to the market to restock this morning :)

  10. You are definitely an inspiration when it comes to eating healthy! Love all your meal ideas. As far as halloween treats, I think I have the hardest time in my family, I try the balance thing as well, one healthy thing then a treat...one healthy...one treat.......

  11. I like how your discipline towards food. Maintaining a fit and healthy body doesn’t mean that you have to keep yourself from eating sweets. Don’t be hard on yourself. It’s still fine to eat chocolates and other kinds of sweet pleasures, as long as you balance it with nutritious meals.
