What I Ate Wednesday


Hard to believe it's June 26th already! The kids have one more day of school tomorrow and then it's home for the summer! The husband too. Should be interesting trying to keep them occupied while doing my freelance writing. Any suggestions?

On to What I Ate Wednesday. On Saturday, I diverged from my menu plan. With my son away at a birthday party, my eight-year-old girl decided she wanted to make dinner. She boiled some veggie hot dogs, put out hummus and crackers and made a salad. Her dad helped her make a chickpea salad to fill warmed naan bread with. It was a nice, light dinner.



On Sunday, I made my favourite lentils and rice. If you are a regular reader, you are probably sick of hearing about it. I encourage you to try making it though, and then you will understand my obsession. The kids like it too, which makes life easier.

I also cooked broccoli the usual way (in a bit of water, with minced garlic, olive oil and salt on top). Then, I poured on a sesame teriyaki sauce from a jar. It was quite tasty.


We have been eating a lot of salads this week. That may change next week. I tend to fluctuate with my consumption of greens.


Now for Tuesday's foods. I started the day with toasted spelt bread. Spelt bread from the grocery store is often dry. It also needs to be frozen right away because it tends to go bad quickly. So, I like to make a spelt bread in the bread maker once in awhile. It can be eaten warm and fresh or toasted later. This time I added dried cranberries, flax seeds and pumpkin seeds. I'll share the recipe later this week.


I had a lazy lunch of gluten-free crackers, tortilla chips, caramelized onion hummus and salsa.


For dinner, I had leftover lentils and rice, sweet potato fries and a Crunchy Vegetable Wrap.


My evening snack: I have been eating quite a few So Delicious frozen coconut almond bars recently. Damn that Costco for selling a big box of them!

I see I didn't eat that much food yesterday, so that's probably why I was craving a sweet in the evening! Actually, truth be told, I always crave a sweet in the evening. Old habits...
