What I Ate Wednesday


We were away from home on the weekend and I neglected to take any photos of my food. Being a vegetarian is sometimes a bit limiting on the road, but I have a few favourite places I rely on.

I had a Subway sub piled with veggies and pickles (hold the cheese), as well as a veggie burger combo (fries please!) from Harvey's. They make the best veggie burgers! I also had a baba ganoush pita wrap from The Pita Pit in Blue Mountain Village. The menu was marked with vegan options, which is (somewhat unusual and) very helpful.

Now, if I were to try to go gluten-free as well, that might be a problem! I would love to hear how full-time gluten-free folks handle eating out.

You might well ask why I have started with a picture of my Keurig making tea...


Well, without photos of the weekend's food to share, I'm going right to my day of eats from Tuesday. I'm rather embarrassed to show you my dull breakfast of toasted spelt bread with peanut butter and jam again, so I thought I would discuss my tea instead. My husband and I only drink coffee occasionally and even then it's decaf, so we don't use our Keurig in its regular capacity all that often. We tend to use it just for hot water for tea. It's basically an expensive kettle. But, on this particular day, I decided to try brewing a K-Cup of decaf English breakfast tea. I topped it off with some coconut milk creamer.


I was so busy yesterday, I kind of forgot to eat lunch. It was almost time for the kids to come home from school and I thought I better wolf something down. I grabbed some brown rice chips and roasted pine nut hummus.


 I also put together a quick plate of fruit.


As soon as the kids got home I had to do my daughter's hair and makeup for her dance recital. Knowing we would have to leave early for the recital, I had put a soup in the slow cooker in the morning. In theory it was supposed to be this Black Bean Sweet Potato Slow Cooker Soup. But, I messed it up by adding chickpeas instead of kidney beans. How does one make that mistake? I went to the basement to get kidney beans. In order to save myself a future trip down the stairs I thought I'd bring up some chickpeas. But, I went straight to the can opener and opened the can! I knew that they would end up rotting in the fridge, so I threw the chickpeas in the soup anyway. I eliminated the cumin and cayenne pepper and added parsley instead. I also didn't have any sweet potatoes. The soup looks ugly, but it actually tasted good. My daughter even liked it, mostly because of the chickpeas...so in the end they helped me.



At the dance recital I covertly ate a peanut butter chocolate Simply Bar out of my purse.


We got home at 10:00 and I was hungry again. I had another piece of toast...and some jelly beans...before getting to bed. Not my best day of eating. I could have used some greens, but I claimed being busy as an excuse.

  2. It's definitely harder to eat on the run! I try to pack extra snacks to ensure I turn to healthy options. But we all have those days where we neglect our optimal amount of veggies/greens/whatever...!

    1. I find that problems arise when I delay going to the grocery store. Then I don't have good snacks to pack. Because we were away on the weekend, I didn't get groceries. I like to have lots of fresh fruit in the house!

  3. That is quite the protein packed day! At least you got your fruit in, even if you are missing greens. Some days are like that. I don't do great eating on a busy day like that, so good for you!

  4. IT IS hard to eat on the road when you are vegetarian/vegan.. GF? I can't even imagine!

    I have used the grocery store as a place to eat - many places have single serving salads and sushi trays that have gotten me through..

    1. That's a great idea. We have used the grocery store too, for salads and sushi, like you say, as well as hummus and crackers. :)

  6. I used to have the worst luck with Subway as a kid being a vegetarian and I've never ventured back as an adult. I just remember orange cheese, bell peppers, pickles, ice-burg lettuce, and salty canned olives... not my dream sandwich :)Looks like a yummy day, even without the veg.

    1. Yep, it's pretty much the same now. I like pickles, though, so I always get extra...and all the veggies.

  8. I loooove that owl mug!! As far as gluten free out, a lot of restaurants actually have gluten free options, though not always clearly advertised. And a lot of salads. A loooooootttt of salads, hold the croutons. It just is what it is!
