What I Ate Wednesday


Happy What I Ate Wednesday! Taking photos of your food really has a way of making you conscious of what you eat. And, when I take this look back at a week of eating, I see where there's room for improvement.

Like, for example, this week I see that I failed a bit in my plan to eat more fruit. I also really should have taken the time to make more salads with my meals. Every week I buy the big bin of organic mixed salad greens and, most of the time, I let about half of the batch rot. It's so easy to prepare, so what's my excuse?

Not that I believe in beating yourself up about what you eat. Food shouldn't be surrounded by stress. But I do like to gently remind myself to make more of an effort sometimes. Like, I always feel better if I make my own baked goods instead of buying them. This week, I made my favourite no-fail vegan chocolate chip banana muffins. They are great for popping in the kids' lunch bags too.


My husband does the cooking on Sundays. He often makes pasta with tomato sauce. He is Italian after all. This past Sunday he made tofu balls again. They are so delicious. I had leftovers for lunch on Monday, above. I'm lucky there were any tofu balls left. I ate so many the night before.


Now for my Tuesday eats. I'm not getting any points for creativity. My breakfast was my old standby, toasted spelt bread with peanut butter and jam. I also had a decaf coffee from the Keurig with coconut creamer (the best creamer ever).


On Monday night I made pasta primavera from this recipe. It's a great recipe for using up veggies in the fridge. I didn't have the zucchini that the recipe calls for, but I did have asparagus and several peppers. This dish is perfectly fine without the parmesan. I have also made it with vegan parmesan.


I had leftovers for lunch on Tuesday. Guess what I had for dinner? Yep, the same thing. It was my son's birthday yesterday and he wanted food from Taco Bell. That's what everybody else got. Fortunately the pasta primavera recipe makes a huge amount, so I didn't have to cook something for little ole me.


Does anybody else think going to the movies gives you license to eat as much candy as you want? I hope so, because I seem to think that. We took the kids to a movie last night (Epic) to celebrate my son's birthday. We stuffed my purse with candy from the bulk food store first. We each made our own selections. I'm surprised I had anything left to photograph. I chose jujubes and dark chocolate covered cherries.

  1. Awww happy birthday to your young man! I tell my kids I do not give them permission to grow older.

    I used to love cinema popcorn but I'd always finish it before the movie started. Speaking of movies, Husband wants to go and watch the new fast and the Furious movie, yay...

  3. Mmm, it's definitely nice to indulge at the movies. And I know what you mean about the accountability through photos.. I always find I eat better when I know I'll be putting the pics up on wiaw!

  7. I love picking up my favorite candies from the self-serve containers and munching on them at the movies. I like variety, so it works well!
